Peanut Butter Chocolate Chip Blondies

I went through a phase where I was hopelessly addicted to Peanut Butter M&Ms. No, not Peanut M&Ms, but it’s far superior counterpart Peanut BUTTER M&Ms. I am whole-heartedly convinced that these candies have been laced with crack, because once you start eating them you cannot stop.

You know those recipes you will never forget? This is one of them. Every once and a while C requests a baked good made of actual butter and sugar and not just air (#glutenfree of course ;)). I was more than happy to oblige, and since I was deep in the throws of my PB M&M/crack addiction there was no question that they would be involved. In fact I can remember the exact day this recipe was born, July 28th 2012.

I have to admit this date is also particularly memorable because I had the worst hangover I have ever experienced in my short life. Generally when I’m hungover I spend half the day talking about how I’m so nauseous and the other half eating ALL THE FRENCH FRIES. On this particular occasion the nausea just wouldn’t go away and I couldn’t stomach the idea of anything until I spotted these beauties from across the room. I promptly polished off 3/4 of the batch and then fell into a coma. When I woke up I was cured. I give full credit to the blondies for saving my life.

I’d like to believe that even without the butter and sugar these Peanut Butter Chocolate Chip Blondies still contain superpowers, or at the very least will cure your hangover.

Peanut Butter Chocolate Chip Blondies

Prep Time: 10 mins

Cook Time: 30 mins

Ingredients (Yields: 12 Blondies)

  • 1 1/3 cup brown rice flour*
  • 1/2 cup potato starch*
  • 1/4 cup tapioca starch*
  • 1 tsp xanthan gum**
  • 1/2 cup coconut palm sugar (or brown sugar)
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1 tsp vanilla extract
  • 1/2 cup all-natural smooth peanut butter
  • 1 cup unsweetened almond milk
  • 1/2 cup unsweetened applesauce
  • 1/2 cup dairy-free chocolate chips (I use enjoy life mini chips)

*Or use 2 cups + 2 T of gluten-free all-purpose flour OR regular flour
**if using regular flour omit xanthan gum.


1. Preheat oven to 350 degrees F.

2. Spray a 9 x 9 inch baking pan with non-stick spray or coconut oil.

3. Combine all dry ingredients except chocolate chips.

4. In a separate bowl combine vanilla, peanut butter, almond milk, and applesauce. Whisk until smooth.

5. Stir wet mixture into dry and mix until well-combined.

6. Stir in chocolate chips.

7. Pour batter into pan and smooth out top.

8. Bake for 30 mins.

9. Remove from oven and let sit for at least 20 mins before cutting in 12 squares.

10. Remove squares and let cool on a wire rack.

11. Will keep for several days in an airtight container.

    Besides that I’m close to eat the letters of my keyboard, I am craving these now for the rest of my life. To stop this, you should maybe send me a batch. Mk?
    Seriously, they look so dense and ah-so-delicious.
    We used to only have Peanut Butter M&M’s when someone brought them over from the US – meanwhile we can find them at ONE exclusive store here in Basel. A lot of effort but darn worth it.

    I’m going to have to take your word on peanut BUTTER M&Ms being all sorts of amazing… I hear good things, but I wouldn’t be able to tell ya from personal experience ;) And I’m honestly not sure what counts as candy… like… I always thought candy was more towards the fruity side (Skittles, jelly beans, gummy bears, etc), with chocolate in a whooooole other category. But then there’s the people who call chocolate bars -candy- bars, and I get all sorts of confused. I like sweet things… let’s just leave it at that :)

    Peanut BUTTER M & Ms?! What is this madness? I am obsessed with the peanut variety and did not know these existed. I know what I am looking for at the grocery store today.
    Our hangovers sound about the same. ALL THE FRENCH FRIES is really the only cure that I have ever found for mine. HOW-EV-ER I am more than willing to try something new…especially when it involves peanut butter and chocolate AND will keep my waistline happy happy happy!

    Funny thing is, I vividly remember being flatlined on the couch with nausea on June 28th, 2012 too…with what I like to call, “All Day Sickness” that came alongside my pregnancy. haha

    Of course I remember my first hangover. How could I forget? It was such a HORRIBLE day haha you know…in bed forever. Anyway, YES peanut butter M&Ms are wayyyyy better than peanut M&Ms–everyone SHOULD know that. These look so good. You already know this but pb+chocolate=perfection.

    Oh hangovers. They were so much easier when I was younger and could eat dim sum in the midst of them (talk about grease overload!) but now..I just dry heave and feel nauseous for hours. Though I have a feeling that these babies would knock me out of my near-comatose state.

    Omggg I LOVE blondies. Like, strangely crazy obsession love. I think it’s because they basically taste like chewy, undercooked cookies. I like that you didn’t go crazy with the chocolate chips, because that’s my least favorite part. I think I need to invent a cookie that is made of the stuff chocolate chip cookies are made of, but without the chips. Like a chocolate chip no chip sugar cookie. Fabulous name for a recipe, no?

    OMG my worst hangover: after i had consumed 14 Black XXX beers because i was a fucking moron and then spent 8hrs in the bathroom the next day puking my guts out. even when there was no more to puke, i still puked but this time it was blood and tears and my insides and my will to live. NEVER AGAIN. and by that, i mean i did it again the next weekend. like i said, fucking moron.

    O.M.G. First of all, peanut butter M&Ms are by far the most superior of all the M&Ms. I eat them by the bucket-full. Not exaggerating, that’s some truth talk. Second, these bars. I want them so badly!!! I really might make them today. I want them right now, and it’s 8:30 in the morning. If not today, then soon. I need them in my life.

    My worst hangover? Hmm…oh, I know! About two years ago I went to a bar with a friend where they had a deal on Jager bombs…which we partook in….all night long….I was dying the next day. While my magical cure was sushi, I think I would have rather had blondies.
    And I’m definitely more of a chocolate person than a candy person – but Pretzel M&Ms have to be my favourite. The peanut butter ones are a close second ;)

    Darn those peanut butter m&ms … there are some in our pantry right now and once I start I just. can’t. stop! As for hangovers … I have two particularly bad ones. One is from a Harvard-Yale game my sophomore year of college, and the other is from a New Year’s Eve a few years ago … and we were at HOME! Yes, sometimes that’s how we roll. These look delicious!

    Oooh magical blondies!! These look great but I would def have to go shopping for some of those ingredients!

    The BF just asked me the other day, “Can you make like REGULAR chocolate chip cookies??” haha I suppose all of my experimentation with almond flour lately (and my habit for putting nuts in things) has driven him to want a plain Jane cookie. :)

    You, my friend, are the gluten-free baking queen. I must say, I’ve never cooked with those starches before nor xanthum gum but I’m totally willing to try! I really really really wish I could pluck one off the screen and crumble it up in the hugh jass bowl of oatmeal that I’m devouring right now.

      I have this very weird thing where I like the challenge of mixing flours and starches…sometimes it’s an epic success and other times it’s a complete disaster. Luckily this time it worked out, but you don’t even want to know about the failures. Tears involved and starches everywhere!

    I love blondies! I’m lazy so I would probably just go with regular flour if I made these, but I believe that they could cure a hangover. My worst hangover was probably New Year’s day a few years ago. My husband and I tried to order our yearly hangover pizza and when the delivery guy came we realized all $200 of our Christmas money was gone. We thought we’d gotten robbed at the bar the night before because our bar bill showed up on the bank statement, so we had clearly paid with a card, not cash.
    Turns out, my drunk husband wanted to be a baller and gave ALL THE MONEY to the bartenders for a tip! Every time we go back to that place, they put us in the computer as “NYE couple.” Total. Fail.

    J does the same thing. I make Paleo cookies and he takes one bite and then puts on a puppy dog face and asks if I can make him a batch of chocolate chip craisin cookies with actual flour and sugar…. which means another trip to the grocery store because I don’t keep either one in my apartment.

    these look SO good! Once I started this lifestyle I stopped making baked goods like this. I was a serious brownie/blondie addict in my former days and could eat an entire pan in just two days, all by myself. (Now I’m eating trays and trays of raw desserts!) so I’m SO excited to find this vegan recipe! Thank you :) Oh, and I’m sure my husband will want to thank you as well haha

    I definitely remember my worst hangover. I actually contemplated going to the er because I was just not keeping anything down. It felt like death for hours upon hours and I couldn’t sleep. The crazy thing was, I didn’t really go overboard the night before. I could not understand what had happened, but it was terrible. Luckily I haven’t experienced a hangover of the same caliber since. I love the sound of these blondies. I haven’t experimented with blondies before but I would love to.

    French fries are my favorite (and also the best) hangover food ever. My worst hangover was when I studied in Greece (way too much ouzo–I can’t even look at the stuff now). I spent the next day eating mashed potatoes from a box and smiley face french fries while watching episodes of the Office with my roommate that she pirated. It was also Thanksgiving. Great story, right? lol But these blondies look delicious!

    My worst hangover? Lord, there have been too many to count. I use to actually be a crazy party girl back in my day… who has now turned into someone who can’t finish a glass of wine.

    Actually, one hangover I distinctly remember was senior year – our marketing class used to all go out on Thursday for “Marketing Madness”. We would pre-game at my house because I lived so close to the bars. I proceeded to BLACK OUT and talk all night to people in my class who knew me and I didn’t even know their names. I broke my phone and proceeded to wear sunglasses to class and in the middle of a lecture, literally laid down on the floor because I couldn’t exist anymore. I don’t know how I’m alive.

    Second worst hangover was after we went out to celebrate me no longer being freelance last year. Also last fourth of July was a pretty massive one because we went so hard on July 3rd. Both are stories I will have to share in person.

    Not to write you a book, but I’m about to do a 21 day sugar detox with Ang and I’m going to make these the day I can have sugar again. I loveee blondies but don’t eat them because of all the sugar/gluten.

      Your school was actually ridiculous! Marketing Madness bahahaha. I would never have been able to go out with my class seeing as I never went to class…recorded lectures and subarctic temperatures would do that to you. I think I maybe made 2 friends in psych? Could also be because all psych majors are crazy and I possessed enough craziness to not need anymore crazy friends in my life.

      Remind me to tell you about the epic night I had in Berlin where I lost my dignity….

      Also you cray for doing 21DSD but I’m interested to see how it goes! I’ll enjoy some chocolate for you ;)

    Hmmm, only an alcoholic remembers their most terrible hangover. Lush.
    I kid, of course. I remember a few of my worst hangovers – sounding very similar to this, and I devour french fries too! :) Naturally, that’s what’s best for curing hangovers. But these, oh my gah.

    I love peanut butter M&Ms!!!
    One of my worst hang-overs was one New Year’s (the first one after I was married)- lots of poor choices on my part and a rough day the next. The sad part – we were in TX with friends (there were 3 other couples) and we all had tickets to go to the Cotton Bowl on New Years day (I know you don’t do sports but this is a big college Bowl game!!). Ummm…I could not possibly go and Chris willingly (without a single snarky comment) stayed with me – epic fail on my part!!!

    I will never forget my worst hangover. My husband says I haven’t been the same since. I was 25 and celebrating my friend’s law school graduation with a pub crawl. It got out of control for many, many reasons, but I can say without a doubt that we win for the shortest pub crawl ever. We didn’t make it past the first bar because there’s no way we would have been let in anywhere else in the state we were in. 5 years later, I’m still not fully recovered.

    I kind of don’t like regular M&M’s. But peanut butter M&M’s? Yes 1000 times over. I haven’t had them in forever for obvious reasons, but I do remember how good they taste. Especially during those long hours after school while I had to wait for my mom to drive me home from school. *Sigh* Oh to be a teacher’s daughter.

    I may have to make a version of these this weekend when I’m home. If I just remember… Which I feel like I always say. And never remember. :) But we have most of the ingredients actually!

    I can most definitely remember my worst hangover…..and it wasn’t from alcohol!!!! No joke- I went to a Brazilian BBQ restaurant which was all you can eat meat. I OD’d and had the worst meat hangover ever… worst. This recipe I would actually enjoy being hungover if that’s what it needs to make it ;)

    My favourite candy ever ironically the dark chocolate m and m peanuts which I only got from Times Square!!!!! I hoarded half a kilo back from the states. It was Winter then. I arrived to a Melbourne Summer. They melted into pretty much one giant liquid pool of chocolate studded with peanuts. Fail.

    My worst hangover? January 1, 2014. I was throwing up until 7 pm and could only finally manage to eat something at 9 pm when my sister brought me candy cane chocolate chunk ice cream. Ugh, I’m shuddering just thinking about it. I NEVER want to feel that way again. :P

    I can’t remember my worst hangover because every hangover I have is my worst. Hangovers suck. I spend the day doing the same thing as you…complaining about being nauseous, eating junk food, and then complaining about being more nauseous haha.     Girl these are right up my alley! Chocolate + Peanut butter are staples in my life. I can never pass up that combo! I used to be addicted to peanut butter M&M’s too, but not as much as recess peanut butter cups…I was obsessed with those things!
    As far as hangovers go…chocolate caramel gelato always gets the job done :)

    OMG, PB M&M’s used to be my crack too!!! I have a picture of me eating them at x-mas years ago when I was overweight… I had called them my “fat food”. LOL. Yes, once you start – can’t stop! I keep far away from those bad boys now. ;)

    July 27th must have been a good night I hope?!!! Ugh hangovers like that are the worst. I talked about what has probably been my worst hangover ever on my blog once — It was during a weekend getaway to New Orleans when I was living in Florida. I drank too many of those famous (and deadly) Hurricane drinks, barely remember the end of the night besides giving myself a bloody nose when trying to wash my face (I wish I was joking), and then literally could not manage to stand up straight the next morning. Whew, it was bad!

    I’ve had a few share of hangovers in my day; most recently on New Year’s Day and before that on my birthday. They have a parade in my honor so it’s really no small wonder. ;)

    I don’t even remember when was the last time I had peanut butter M & Ms, but I love peanut butter anything. And now I wish they are vegan! There’s a blondie recipe from the new Vegan Chocolate cookbook I want to try! I need to try it after seeing loads of mouthwatering peanut butter blondies here! x Rika

    Oh yeah, these were worth the wait INDEED!! Man oh man could I use one of these babies right about now! Looking good in the neighborhood! Why? WHY did I just say that? Umm….ok, moving on! Hangovers! Yeah, let’s talk about them…or maybe we could talk about my early onset Alzheimers and/or the fact that I lost a massive amount of brain cells from the time I was a sophomore in high school to freshman year in college…pretty sure I had at LEAST a dozen or so hangovers…can’t remember a single one now…probably a good thing. But I will NEVER forget the time I tossed my “cookies” after taking a shot of something or other on top of a hefty amount of peach schnapps. No, I will never forget THAT!

    Decided to try these rather than the GF Chocolate Chip Cookies…ya know, because I made the pb in my Vitamix the other day. I never alter recipes I’ve never made, but I didn’t have the potato starch or tapioca starch, so I used garbanzo bean flour. Not sure how it will mix and I still used the xanthan gum. So, we’ll see. I even bought some coconut flour. Stay tuned….they smell good.
