A part of me wants to talk about how I have writer’s block, but that’s boring.

A part of me wants to talk about how I’m kind of obsessed with these pictures, but that goes against my modest nature (ahem sarcasm)

A part of me wants to talk about how I attempted to photograph my latest oatmeal recipe before eating anything and the wicked witch of the west came out to play, but today we’re talking waffles.

A part of me wants to talk about how I wished you guys had voted for the oatmeal instead of the waffles in my Facebook and Twitter poll because I actually have something to write about the oatmeal, but you didn’t.

A part of me wants to talk about how I  would rather be watching The Real World right now, but….so shameful.

A part of me wants to talk about how awesome these Lemon Buckwheat Waffles are, but instead I talked about absolutely nothing.

Lemon Buckwheat Waffles {Gluten-Free & Vegan)

Prep Time: 10 mins

Cook Time: 10 mins

Ingredients (yields: 4-5 waffles)

  • 2 chia eggs (2 T chia seeds mixed with 6 T warm water)
  • 2 cups buckwheat flour
  • 1/3 cup of coconut flour
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 2 T maple syrup
  • 1/4 cup apple sauce
  • 1 1/2 cups unsweetened almond milk
  • zest of one lemon
  • juice of one lemon
  • pinch of salt
  • ½ cup of coconut flakes (optional)

Instructions

1. Turn on waffle-iron and let heat up.

2. Make chia eggs and set aside.

3. In a large bowl combine dry ingredients.

4. Combine vanilla, maple syrup, applesauce, almond milk and lemon juice and zest. Stir in chia eggs.

5. Add wet ingredients to dry ingredients and mix thoroughly. Add pinch of salt. Waffle batter will be thick.

6. Spray waffle iron with non-stick spray or grease using melted coconut oil.

7. Add a 1/2 cup of batter to iron and follow waffle iron instructions to tell you when the waffle is done.

8.Top with mixings of choice.

  2. Do I have to wade through a lot of waffle about the things you want to mention before I could get to the recipe? I don’t need to read people’s life stories just to see a recipe.

  3. When I look for a new recipe on a weekly basis I always read the comments it helps me pick a recipe . While your waffles look amazing it’s hard to really know from the viewers how good they are . Sometimes they give you some tips of replacing some ingredients with other things , but then I come across some websites that they just talk about girls stuff or ramble , here I am scrolling down and wanted to find comment about the recipes but can’t find one about it !! they don’t make the recipes and it’s not really helping me picking out your recipe over another one . Anyway I will make your waffles and post a real comment maybe it will help someone , i love to hear comments of different cooks it makes a huge difference for trying a new recipe . I am an avide cook always wanted to cook different recipes with healthy ingredients . Can’t wait to try this one an post my comment tomorrow ….thank you

  4. I am allergic to coconuts so what can I replace coconut flour with that would be a better consistency.

    1. Unfortunately it’s hard to find a perfect substitute for coconut flour. You could try almond meal, but I can’t promise they’ll turn out!

Another part of me wants to tell you that I don’t even like lemon, but I’m pretty sure you could talk me into one of these sugar dusted waffles. Part of me wants to know more about the chicken fingers man. Part of me wants to tell you that I’m sorry for getting so far behind in your posts. Part of me thinks you should know that I’m leaving you a good sized broccoli bomb right now instead of taking a nap. Part of me wants you to take pity on me and mail me cookies. 😉

  7. Hi Davida! This is beyond odd….no wonder I couldn’t keep up with your posts 🙁 so sorry! For some reason, my feedly isn’t showing your recent posts and I just resolved it by adding the current feed/link again, it must have happened after you had a new site design. Yummmm, that’s some yummy looking waffles – I love a bit of tangy flavors from the waffles! I love the photos!

  9. Even though you talked about nothing, this was one of my favourite posts yet!! You talked about so much while talking about nothing at all- AWESOME!

    So awesome, that I want to make these immediately, but alas, no waffle iron. I really must just bite the bullet on that one!
