These paleo peppermint donuts are make with healthy ingredients and topped with a delicious and natural green coconut frosting.

Have you ever made your own donuts? I always thought they were super hard to make but honestly if you have a donut pan, you’re halfway there! I will be honest right off the bat… these aren’t deep fried or light and airy. They’re more like a cake donut, which I actually prefer!

These paleo peppermint donuts are loaded with healthy ingredients but that doesn’t mean they aren’t delicious! They are sweet without leaving that sugar coating in your mouth and refreshing at the same time thanks to the peppermint. If you’re looking for a festive, healthy and tasty treat, give these donuts a try!

Peppermint Donut Ingredients

  • Almond meal
  • Coconut flour
  • Unsweetened cocoa powder
  • Baking soda and baking powder
  • Unsweetened applesauce
  • Eggs
  • Honey
  • Vanilla extract
  • Peppermint extract
  • Sea salt
  • Full fat coconut milk
  • Matcha powder (can skip if you don’t want green frosting!)

How to Make Homemade Donuts

STEP 1: Combine the almond meal, coconut flour, cocoa powder, baking powder, baking soda and salt. Stir to combine. 

STEP 2: To the dry ingredients, add in the applesauce, eggs, vanilla and peppermint extract. Stir well to combine. 

STEP 3: Grease a donut pan with coconut oil and divide batter evenly in each cavity. Bake at 350ºF for 15 minutes. 

STEP 4: Let cool in the donut pan for 20 minutes before letting cool completely on a wire rack. 

How to Make Coconut Cream Frosting

The most important thing when it comes to coconut cream frosting is to not shake your can of full-fat coconut milk and then place in the fridge for at least one hour. This allows the cream to solidify at the top of the can and the coconut water will be at the bottom. 

STEP 1: Remove the coconut cream from the can and add it to a large bowl or stand mixer bowl. Beat on high for several minutes or until the cream holds soft peaks.

STEP 2: Add the match and honey to the coconut cream and beat for an additional minute. 

STEP 3: Use a knife to frost donuts. Store in the refrigerator for up to 1 week.

How to Store Homemade Donuts

You can make these donuts in full and frost them before storing or store the donuts and frosting separately – either option works great! Store in the refrigerator for up to 1 week.

Ingredients

For the donuts:

  • 1 cup almond meal
  • 2 tbsp coconut flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 3 tbsp honey
  • 1/2 tsp vanilla extract
  • 1/2 tsp peppermint extract

For the green frosting:

  • 1 can full-fat coconut milk (left in fridge for at least 1 hour), do NOT shake
  • 1/2 tsp matcha powder (spirulina powder also works), omit if you don’t want it to be green
  • 1 tbsp honey

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl combine almond meal, coconut flour, cocoa powder, baking powder, baking soda and salt. Stir to combine.
  3. Add in applesauce, eggs and extracts. Stir well.
  4. Grease a donut pan with coconut oil.
  5. Divide batter evenly.
  6. Bake for 15 mins.
  7. Remove from oven and let cool for at least 20 minutes before removing from donut pan.
  8. Once removed, let cool completely on a wire rack.

For the green frosting:

  1. Remove coconut cream from can (should separate easily from coconut water) and add to a large bowl or stand mixer bowl. Beat on high for several minutes or until cream holds soft peaks.
  2. Add in matcha and honey and beat for one more minute.
  3. Frost donuts with a knife.
  4. Store in fridge for up to 1 week.
