Topped with fresh veggies on a grain-free, almond meal and cauliflower crust, this recipe will make you never want to order in a delivery pizza again.Whenever people ask me my #1 recommendation for eating healthy, I always have the same response: “When possible, shop the outer aisles at the grocery store. Stick to produce and organic meats and seafood and try to limit what you find in between”. I do have some pantry staples that spend their lives on lovely shelves, but my main form of sustenance comes from food that have a shorter shelf-life.

I live this way because 90% of the non-pershable foods you find in grocery stores are highly processed and full of ingredients I’d rather not ingest. That being said, it isn’t always realistic or feasible to live off the outer aisles. I think healthy eating requires work, but it shouldn’t be all-consuming.

Most boxed pizza mixes are made from god-knows what ingredients and offer zero nutritional benefit. But let’s be real, going out and buying all the flours and putting together the dough requires more work than ordering in a delivery pizza. It’s at this point that I’d rather a) order in or b) just make something else. It’s probably why you rarely see a pizza recipe on the blog!

I’ve said it before, and I’ll say it again. What we need are more companies making fantastic products from REAL FOOD that make healthy eating easy and equally as delicious as not-so-healthy food. I’m grateful to live in a day and age when these companies are becoming a reality…and may force me to update my first tip to healthy eating rule!

One of these awesome companies is Simple Mills. They make pre-made baking mixes for cookies, cakes and bread made from real ingredients. They’re all gluten-free, paleo-friendly and dairy-free. Not only that, but they are seriously awesome. We’re talking blown-away awesome! I was particularly impressed by their pizza dough, which not only tasted amazing but also totally passed as delivery pizza dough. One of my issues with homemade gluten-free or paleo pizza dough recipes is that you can rarely pick them up. I don’t have the patience for a knife and fork so being able to pick up the dough is a priority. Total success on this front. I was able to inhale half the pizza in 2.5 seconds.

Oh but these are not the only veggies! Simple Mills’ pizza crust actually has CAULIFLOWER in it. Yes, you read that correctly. There is cauliflower in the crust! So basically it’s magic crust and pizza is now an acceptable meal for every dinner. Also I’m game for anyone who shares my love for hiding vegetables in everything.

Before I go and inhale the other half, I thought I should mention the other ingredients in it. What you will find: Almonds, Arrowroot Powder, Flax Meal, *Cauliflower*, Organic Oregano, Cream of Tartar, Organic Garlic. 

And that’s it.

Mushroom Asparagus and Ricotta Pizza {Gluten-Free + Paleo Crust!}

Ingredients

Scale
  • 1 Simple Mills pizza crust
  • 2 tbsp olive oil, divided
  • 2 scallions, white and light green parts only, chopped
  • 2 garlic cloves, minced
  • 2 cups sliced mushrooms
  • 1 1/2 cups chopped asparagus
  • 1/2 cup organic mozzarella, sliced
  • 1/2 cup organic ricotta
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 2 tsp balsamic vinegar
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Make your Simple Mills Dough according to package instructions.*
  2. Brush crust with 1 tbsp olive oil and set aside.
  3. Add remaining olive oil to a large pan and heat over medium heat.
  4. Add scallions and garlic cloves and sauté for 1-2 minutes.
  5. Add in mushrooms and asparagus and continue cooking until mushrooms have absorbed most the liquid and have wilted (about 5 minutes).
  6. Top your pizza with mozzarella slices and then sprinkle with ricotta.
  7. Place mushroom-asparagus mixture overtop of cheese.
  8. Sprinkle with salt and pepper.
  9. Bake for 15 minutes or slightly longer for a crispier crust.
  10. Remove from oven and drizzle with balsamic vinegar and sprinkle with red pepper flakes, if desired.
  11. Allow to cool for 10 minutes before slicing and serving.

Notes

*I made one large pizza but you’re welcome to split it into two as the package instructions call for.

  6. Uhhhhh nomz. That ingredient list is fantastic! I’m totally a pizza with my hands kind of gal. I’m also super boring considering my favorite way to eat pizza is with plain cheese, but I love veggie pizza too. Love these toppings – perfect spring pizza!
