This partially had to do with the fact that baking has always been my one, true love and also because of circumstance.

I started this little space of mine when I was 23 and living in my parents basement. True story: My parents refer to each of their children’s BA’s as “basement apartment” rather than bachelor of arts degree. Love you guys 😉

Even though I certainly had the skill set to cook for myself, there’s something about moving back into your parent’s house that makes you regress in all life skills. I once again began living off my Mom’s soup’s and whatever place I could convince my dad to do takeout from after our weeknight gym sessions (yes- I worked out with my Dad. He’s the man!).

3 years later I feel like all of my kitchen experiments and priorities have totally shifted. I miss my weekly takeout with my Dad and my Mom’s soups (although she does occasionally drop some off for me!) but I’m marginally more of an adult now and I’m one of two people in our home responsible for cooking. And only one of us can actually cook…I’ll let you guess who.

This means that quick and easy one-pot dinners are now the norm. These Sweet Potato Noodle Pad Thai has become a staple. It’s quick and easy so perfect for a busy weeknight.

Ingredients in Sweet Potato Noodle Pad Thai

  • vegetables – garlic cloves, yellow onion, red bell peppers, sweet potatoes, green onions and cilantro.
  • coconut oil
  • sweet chili sauce
  • coconut aminos – or tamari or soy sauce work well
  • fish sauce
  • lime zest and juice
  • tamarind paste
  • coconut palm sugar – brown sugar works too
  • peanuts
  • crushed red pepper flakes

How to Make Sweet Potato Noodle Pad Thai

STEP 1: Start by making the sauce. Mix the tamarind paste and hot water until paste has dissolved completely. Combine the tamarind mixture with the sweet chili sauce, coconut aminos, fish sauce, lime zest and juice, and coconut palm sugar. Set aside.

STEP 2: Add coconut oil to a large skillet over medium heat. Add your onions and sauté until fragrant and translucent. Add in the garlic and cook for an additional minute. Add in the bell peppers and cook for 5 minutes.

STEP 3: Add the sweet potato noodles to the vegetable mixture and cook for 1 minute before covering the skillet and letting the mixture steam for 2 minutes.

STEP 4: Add the sauce to the vegetable mixture and stir until well combined.

STEP 5: Place and top with cilantro, peanuts, green onions and red pepper flakes.

For the Sauce:

For the Noodles:

  • 2 tbsp coconut oil
  • 4 garlic cloves, minced
  • 1 medium yellow onion, diced
  • 2 red bell peppers, chopped
  • 2 large sweet potatoes, spiralized on second largest setting

For Topping:

  • 1/4 cup cilantro, chopped
  • 2 tbsp peanuts
  • 3 green onions, sliced
  • crushed red pepper flakes

Optional:

  • If you aren’t vegan, stir in some cooked chicken, shrimp or add an egg in the last minute of cooking.

Instructions

For the Sauce:

  1. Mix together tamarind paste and hot water until paste has dissolved in water.
  2. Combine with all other sauce ingredients and then set aside.

For the Noodles:

  1. Add coconut oil to a large skillet over medium heat.
  2. Add in onions and sauté until translucent (about 3-5 mins).
  3. Add in garlic and cook for 1 more minute.
  4. Add in bell peppers and cook for 5 more minutes.
  5. Add in sweet potato noodles and cook for one minute before covering skillet and letting steam for 2 minutes.
  6. Continue cooking until sweet potato noodles are cooked to desired texture.
  7. Add in sauce and stir until well combined.
  8. Plate and top with desired toppings.

*I know this is a weird ingredient but it is essential for pad thai. You can find it in most Asian grocery stores or order online.

  1. This was FANTASTIC. I cut this recipe by 2/3 for s single serving. I added 2 C. of shredded cabbage and it was very filling. WOW!

  2. I just got a spriralizer this week and can’t wait to put it to good use and spiralize some sweet potatoes, especially since I love Pad Thai! 😀
    Aw I know! Been “officially” living with the Bf for 2.5 years, and despite some turbulence over the cleaning or washing-up that may happen from time to time, I’ve never laughed so much and often, and fell asleep with a big smile on my face than with him. 🙂

  4. The recipe calls for Sweet Chili Sauce however in the background of the photos, it looks like I see Siracha. I would prefer Siracha if that is the case… What did you use?

    1. That’s actually sweet chili sauce in the background 🙂 Made by the same company that makes sriracha. Sriracha is the hot version of their sweet chili spice. You can certainly use sriracha but you may need to add a bit more coconut sugar and not use as much since it will be quite hot. Let me know how it goes!
