If you haven’t picked up on it yet I have a serious obsession with breakfast food. Breakfast is by far my favourite meal of the day. I almost always wake up hungry. I must have eaten A LOT the night before or be sick if I don’t wake up with a raging appetite. I think I enjoy cooking up breakfast recipes because my body feels refreshed after waking up and isn’t bogged down after a long day at work and everything else that is life.

Nothing makes me happier than cooking up breakfast for friends! Eating my favourite meal of the day with my wonderful friends (and family!) is truly the way to my heart. Perhaps this is why I enjoy brunch so much…I get to combine my love of great food and friends at an hour that seems to be more reasonable for the rest of society. I also love it because I usually can’t make it between waking up and brunch without eating breakfast first so it’s really like eating breakfast food twice. Score!

Last Saturday was a particularly special breakfast. It was the first breakfast that C and I were able to share after his big move to Toronto! FINALLY after two years of long distance we are living in the same city. I could not be happier or more proud of my engineer 🙂 So to celebrate I gave him free range of breakfast options (this is rare…I am a total kitchen control freak). My man likes his waffles so waffles it was! Since I am entirely incapable of not putting any sort of healthyish twist on a recipe and I also wanted to be able to eat them (aka had to be gluten-free) we agreed on Gluten-Free Cinnamon Roll Protein Waffles. Clearly I chose the GF and high-protein parts and he chose the cinnamon roll. Regardless these turned out sooooo good! I have a couple frozen in my freezer that I am coveting for special occasions.

Cinnamon Roll Protein Waffles // thehealthymaven.com #glutenfreeI’ll admit, they are missing the creamy frosting but that was only because we were out of cream cheese. Probably a good thing since my stomach would not have been a fan but if you’re good with dairy I would definitely recommend mixing 1/2 cup of cream cheese with 2 tablespoons of maple syrup. If not, maple syrup or whatever topping you so desire (I went with maple pumpkin seed butter) will be equally as delicious.

Gluten-Free Cinnamon Roll Protein Waffles

Ingredients

Scale
  • 2 scoops of vanilla protein powder
  • 1/2 cup almond meal
  • 1/4 cup coconut flour
  • 1 cup oat flour (ground oats)
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 1 1/2 tsp vanilla
  • 2 tsp cinnamon
  • 1 egg + 1 egg white
  • 1/2 cup apple sauce
  • 1 cup almond milk
  • 2 T maple syrup

Instructions

  1. Mix together all dry ingredients.
  2. In a separate bowl mix together eggs, vanilla, apple sauce, and almond milk.
  3. Combine wet ingredients with dry ingredients.
  4. Let mixture sit for 10 mins while waffle-maker heats up.
  5. Spray waffle-maker with non-stick spray before adding 1/2 cup of batter.
  6. Cook according to waffle-maker instructions.
  7. Serve with maple syrup or toppings of choice.
  8. These freeze well and just toast them for a few minutes to defrost.
