{MIMM} Weekend Recap 09/13-09/15

Today truly is marvelous! You want to know why? I’m healthy. I mean this in the grand-scheme of things but also because the EAR VIRUS I had finally went away. You’re probably thinking WTF is an ear virus? There seems to be a cold virus going around to virtually everyone in my life. It was inevitable that I get it too. For whatever reason rather than situating itself in my nose or throat it decided to go to my ear. Ever had an involuntary twitch in your ear drum? I hope not since it is by far the most irritating thing ever. And that’s how I spent my weekend…

AND it was Yom Kippur, aka the worst day of the year to be a food blogger. I however did not fast since I don’t believe that starving myself is the best way to atone my sins…I prefer to bake. So bake I did, interspersed with some naps and a whole lot of family time. So without further adieu let’s recap my sickly weekend…

Beer can chicken. And three of them no less. On Yom Kippur we go big or go home.

Forgot to take a picture of the actual meal, but like usual there were tons of leftovers. Confession I absolutely love leftover cold chicken. Anyone with me on this?

A beautiful run! Well walk-run would be more accurate. I’m trying to take full advantage of my new perspective on running. I walked to my favourite running path in Toronto, The Belt Line and ran a portion of it before heading home. Felt great to be outside and the weather was gorgeous. My hip acted up post-run but some foam rolling, ice and aleve eased a bit of the pain. It also made me not think about the small child banging drums in my ear!

The rest of the afternoon was spent baking. I made these Kabocha Squash Brownies which I had high hopes for but was somewhat let-down. I though they tasted too healthy. I hesitantly brought them to our Yom Kippur break fast and shockingly everyone really liked them…these are the same people who insisted I bring the unhealthy version of the Salted Caramel Apple Crumb Bars. So I guess I’ll post the recipe!

My Saturday night was not interesting enough to share but these pancakes definitely are. Matcha Spinach and Pumpkin Pancakes w/ Pistachio Butter. I’m thinking these would be a prime candidate for Laura’s Strange But Good link-up? That would be a David’s Tea Pumpkin Chai latte on the side.

Leg day at the gym (thought I’d spare you the selfies) and then an afternoon of food prep. I made The Detoxinista’s “Cheesy” Broccoli Quinoa Casserole, a new cauliflower risotto recipe,steel-cut oats cooked in David’s Tea Pumpkin Chai, sweet & spicy plantain chips, washed and chopped fruits and veggies (unpictured) and lots and lots of Yom Kippur leftovers.

Food prep was essential this week since things are getting even crazier on my end. I have some big news!!! I signed up for George Brown College’s Intro to Baking course. It’s a four month intensive baking course offered once a week through their baking & pastry arts program. I’ve been wanting to do this for years and after all my preaching about making new friends I thought this would be a great opportunity to improve my skills and meet new people with a similar interest. I’ll keep you posted on my progress.

    Glad your ear virus is better, must have been extremely uncomfortable. I like leftover cold chicken, too. As well as pretty much cold leftover anything, though it might partly be due to the fact that I’m too lazy to microwave it for a few minutes. Not always, but it happens particularly often during summertime. I blame the heat. 😛

    Your take on Yom Kippur = perfection. Ah your food prep was so productive! Jelly sandwich. I only got around to roasting some veggies… we have heaps of leftovers.

    Kabocha squash brownies?! Yum!! They definitely sound marvelous. 🙂
    I love cold chicken too! Don’t know why, but it’s just so good that way. Turkey too!

    That baking course sounds so awesome! I’ve honestly been thinking about something like that just as a way to try and meet some new people, so I can’t wait to hear about your experience with it 😀 And omigosh girlie, I’m going crazy for cold leftovers right now. For whatever reason, I’m really into cold roasted veggies like kabocha and broccoli. Sounds ridiculous, but sometimes nothing else sounds better when snack time rolls around.

    As it is my lunch break now as I write this, I am actually eating leftover rotisserie chicken..cold! Although it is store bought 😉

    Congrats on the baking course- based on all your recipes so far, you will no doubt flourish in it! Love the idea of the macha pancakes- I stocked up on some powder randomly when I was over there in December so need to add it to the ‘cakes. Especially in the am when I need its caffeine boost!

      I didn’t add that the matcha in the pancakes plus the tea latte made me a bit shaky all morning…

    YAY for feeling better and a bigger yay on the baking course! It sounds awesome and if those Salted Caramel Apple Crumb Bars are anything to go by, you will be a smashing success! Can’t wait to hear more about it! I love cold leftovers, especially when they come in pizza or pasta form ;)!

    That is super cool that you are taking an intensive baking course! I’m sure you will learn so much. I’ve never ever taken a baking or cooking class, but I definitely think I should. It would be useful for sure!

    Ew that ear virus sounds awful!!!!! Good thing that is gone hahah

    I really didn’t do much of anything this weekend. I dedicated it to homework lol. Not super exciting, yet I feel very accomplished and ready for the week, so it was a trade off I guess!

    Baking sounds like a much better atonement than fasting. Just look at it like this: baking lets those around you benefit, too, while starving doesn’t at all. Who could argue that ;)?
    Ouch, that ear infection you had sounds nasty so I’m glad you’re fine again.
    I’m not that much into cold leftovers. Roasted vegetables, however, might be an exception at times because I had some yesterday and couldn’t stop snacking even the cold leftovers.
    Would you mind sharing your recipe for plantain chips? I’ve been intruiged by trying plantains for a while but haven’t yet.

    I haven’t tried beer chicken yet, but I’ve always wanted to. It looks so good! YES, I definitely agree that cold chicken tastes better. I love cold scrambled eggs too.
    That’s too bad about the kabocha squash brownies – for a second I was really excited I’d have something new to try with my squash garden!

    I took a sushi class once – I loved it! But I’ve found that its still less expensive to just go out for sushi, rather than making it at home. Haha!

    I just signed up for a photography class that starts next week! First time I’ve ever done anything like that since the college days, so it should be interesting to essentially go back to school.

    Leftovers are my jam. I don’t know if I would get through a week without them ha.

    I like cold chicken too 🙂 I always end up picking at it and eating it even when it’s on its way to be heated up! Those matcha pancakes sound great…I still need to get my hands on some matcha! Sounds like you had quite the busy and food-filled weekend. Happy Monday!

    I love beer can chicken! I also don’t mind cold chicken, I figure chicken salad is served cold and that tastes good so why not? I had a great date night on Saturday and girl’s day yesterday!

    Isn’t it the best when you make something healthy (but you’re afraid no one will eat it because it tastes healthy) and then everyone likes it? Thumbs up (I’d love to see the recipe!) And so impressed with all your meal prep; it will make life easier, I’m sure. And that pic is so cute!

    davids tea pumpkin chai is the ONLY pumpkin drink i like!

    and glad that you got better; i once had an ear infection AND pink eye and i thought: OMG, what am i, a toddler?!

    the only time i had beer chicken was at a friend’s cottage and she made it – sooo good!!

    You are exactly right- I was thinking WTF is an ear virus? Lol. And then I saw a picture of headless chickens with beer cans up their ass. 🙂
    Sorry to hear about the small children banging drums in your ears- I hope they go away soon!

    That’s so exciting about your baking course! I have wanted to sign up for something like that for a while but haven’t made time. I can’t wait to read about your experience and the new friends you make! I wish I could go with you.

      Can’t wait for the course although to be honest I’m a bit nervous since I’ve been out of school for 2.5 years!

    Those Kabocha Squash Brownies actually look delicious!! Yumm I made some black bean brownies a few months ago that were delish! Gotta love the “healthy desserts”. And that is so cool that you signed up for that course! If it was a little cheaper I would have done it too! haha

    I’m glad you posted that quinoa link because I’ve been trying to figure out how I want to cook the big batch that I made. Most interesting part (or best part?) of the weekend – finally buying the booties that I’ve been eyeing for the past few weeks. Glad you are feeling better, lady!

    I’ve never tried Kabocha. Spent the yesterday resting, relaxing and slowing things right down. Felt really good. I baked too 🙂

    I eat all my leftovers cold. HA! I don’t own a microwave, and I am too impatient to use the oven to heat things so I will EAT THEM COLD! YUM!

    Random ear drum twitches are the worst so I give you major props for dealing with that! Yikes. And congrats on signing up for that class! It sounds so, so cool. I’ve wanted to take cake decorating classes for a while, and hopefully that’s something I can do once I have a little extra time.

    Ohhh! Good luck at your baking course! That is so awesome! You are going to have the best time! I think the three best things about my weekend were: 1) spending it with my husband; 2.) going to the beach and 3.) seeing my cousin’s baby for the first time.

    Ugh – yuck to the ear virus that can’t be fun!!
    I’ve always wanted to try making beer can chicken – not sure why I never have!
    And, I while eat leftover meat cold straight out of the bowl while standing at the kitchen island – classy!!!

    I’m glad you’re feeling better and got a run in! I attempted a run yesterday but because of a hernia it was so painful that I just started crying on the side of the road and then walked home (which I think is a runner’s version of the walk of shame). I don’t know what the proper phrase is, but do you wish people a happy Yom Kippur or is there no phrase that really corresponds to that holiday? Sorry for my lack of specific Judaic knowledge!

      To be honest I don’t even know what you say…probably should have paid attention in hebrew school!

      Sorry to hear about the run! If it’s any consolation the alive/foam roll trick only temporarily relieved my pain and once again I am back on bed rest grrrr. Stupid leg!

    That ear virus does not sound fun – I’m glad you’re feeling better!

    I’m a big fan of cold leftovers too. Especially pizza, sweet potato, and roasted chicken/turkey!

    Also that’s so cool about that baking course! I’ve always wanted to sign up for a cooking/baking class, but there aren’t really any offered in Burlington and I don’t have the time to drive too far on week days. I can’t wait to hear about your experience though!

    Sorry, Davida, but I’m going to have to say no on the cold chicken. Cold pizza for sure but most of the time that’s not so healthy.

    I can’t wait to hear bout your baking class. I’ve been looking for classes around here but most of them don’t fit into my schedule or are more than I can afford.

      Have you checked out your local libraries and YMCAs? sometimes they offer free classes and they can be pretty great!
