Pumpkin Snickerdoodles {Gluten-Free}

I know, a pumpkin recipe two days in a row. There are worse things in the world right? And like I told you, this is what happens when a blogger (or anyone for that matter) opens a can of pumpkin. All pumpkin hell breaks loose. But I’ll be honest, I’m kind of getting over pumpkin. Thankfully this is perfectly acceptable in Canada because we got Thanksgiving out of the way in October. We’re now onto bigger and better things aka gingerbread.

I’m starting to build my recipe arsenal as we speak (and by speak I mean in the refrigerator…can you guess what is is?), but first I had to cleanse myself of all things pumpkin. In cookie form. I actually put a call out to you on Sunday to ask whether I should post the pumpkin snickerdoodles or the pumpkin cornbread this week, but I surprised myself and managed to get my act together for both posts.

Pumpkin Snickerdoodles-Healthy Pumpkin Snickerdoodles that are also #glutenfree! // thehealthymaven.comYou may have noticed, but I post A LOT of cookie recipes. That’s because cookies are by far my favourite baked good. I am the original cookie monster. But a diva cookie monster. Not only does the cookie have to taste like a fusion of gold and diamonds, but it better have the perfect texture. I like my CCC crunchy and my snickerdoodles soft as a pillow. They are precisely this. In fact I would have considered sleeping on them if I hadn’t finished them in one day.

Pumpkin Snickerdoodles {Gluten-Free}

Cook Time 30 mins
Total Time 30 mins

Ingredients

  • 2 cups gluten-free oat flour (ground rolled oats)
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/4 cup coconut oil, room temperature
  • 1/2 cup coconut palm sugar
  • 1/2 cup pumpkin puree
  • 1 egg
  • 1 tsp vanilla extract

For the coating

  • 1/4 cup coconut palm sugar
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat oven to 350 degrees F.
  2. Line a baking sheet with parchment paper or a silicone mat.
  3. Combine all dry ingredients.
  4. In a separate bowl combine coconut oil, pumpkin, egg whites and vanilla extract
  5. Slowly incorporate wet ingredients into dry ingredients.
  6. Combine coating ingredients in a different bowl.
  7. Roll dough into 24 teaspoon sized balls.
  8. Roll each cookie in the coating.
  9. Once coated, place cookie on baking sheet and flatten each with the palm of your hand. 12 cookies per sheet.
  10. Bake cookies for 12 minutes or until golden brown around the edges.
  11. Remove cookies from oven and let cool for 5 minutes on baking sheet.
  12. Place cookies on wire rack to cool completely.
  13. Store in an airtight container at room temperature for up to 5 days.

    I was waiting & praying you’d be sharing a pumpkin snickerdoodle recipe with everyone. I’ve had coconut palm sugar just sitting in my pantry waiting to be used. I’m not sure why, but I always forget about it. This seems like the PERFECT time to put it good use 🙂

    Sleeping on snickerdoodles? Is it strange that I find that ridiculously appealing? Who needs feathers…

    But I hear ya about being over pumpkin… I’m slowly getting sick of it as well, especially since opening a can becomes such a huge commitment. As for baked goods, cookies will always have my heart… especially if we’re talking chocolate chip oatmeal.

    Favorite kind of baked good is cupcakes I think. I just love them (and icing). I am not over pumpkin just yet, as I still have a month of pumpkin to go. Perhaps it will last into December, since I’m going to make this cookies at Christmastime! Random question… why do Canadians spell favorite “favourite”? I’ve always wondered. I kind of like it your way better.

    It’s a close race between cookies and brownies- what about both?! I gotta be honest, I am not the biggest fan of pumpkin ( i know, I should be shunned in blogland), so I am looking forward to the gingerbread recipes! These look delicious, though and I would probably eat at least three if they were in my vicinity.

    Because I fail in the kitchen in every regard, I have already messaged Bek to inform her that she will be making these for me once we are off our little sugar detox program in a few weeks. These look and sound amazing and thank goodness you got your act together long enough to post two pumpkin recipes!

    I am not nearly over pumpkin but that’s because I’ve been enjoying it slowly so as not to over do it! It’s one of my favorite flavors!

    Well cookies and pumpkin are two things that you can NEVER have too much of!! I can’t get over how creative and amazing these look! I don’t have all the ingredients here at school with me, but I just bookmarked the recipe so they’re officially on my to-make list over Christmas break. Don’t let me forget about them!! 🙂

    snickerdoodles and cornbread in one week? you may find me on your doorstep soon 😉 I’ve yet to actually try a snickerdoodle, which is apparently a terrible thing.
    And I feel like this is practically blasphemous, but I’m not actually the biggest fan of baked goods :S I mean, I like them, but they’re not my go-to. I’d rather eat the cookie dough then eat an actual cookie, and if I’m craving something sweet I usually go for chocolate or ice cream. That being said, I do love a big slab of cake or a brownie once in a while.

    Oh hell yes- these sound divine! I’ll never forget my first bite of a snickerdoodle back in the day- it transported me to cinnamon carby heaven. I can easily pass up brownies but cookies fresh out the oven? All self-restraint goes kaput!

    I’m definitely going to try this recipe with almond flour instead of the oat flour. They look super yummy!
    Maybe you could make gingerbread snickerdoodles, if pumpkin is starting to get old! Now, that, sounds delicious.

    “Gold and diamonds” – best description ever! I love that these are gluten free without me having to go buy rice flour or sorghum or whatever. Pinning! My dad’s favorite cookie is snickerdoodles and I too am cleaning my fridge in prep for gingerbread (great minds think alike!) and these are perfect!

    gingerbread!!! im hopping on that bandwagon too, but its not like im saying to no to pumpkin- theres still like 3 more weeks of legit pumpkin season in the states, so im just making more space in the “cravings” portion of my stomach. ( <---- did that even make sense?? def not) anyway you get the gist, and these look amazing! snickerdoodles are the perfect cookie.

    Getting over pumpkin? Bite your tongue! 😉 I don’t think I’ll be over pumpkin until April. And even then, I’ll still probably try to sneak it into my breakfasts and baked goods. Love the look of these cookies! Can you believe before last winter I’d never had a snickerdoodle before? Such a tragedy because snickerdoodles are awesome! And I bet the pumpkin just makes them awesomer. I know that’s not a word, but let’s just go with it, okay? 😛

    I usually have pumpkin all year around, I love it! It is so great for baking even when it isn’t the star of the recipe. These cookies look so great I really can’t decide what my favourite baked good is, but if bread counts then bread it is!

    I was actually complaining to Amanda that we don’t have snickerdoodles here in Australia to make her truffles…well now I can kill two birds with one stone- make these then make her truffles 😉 Smart (snickerdoodle) cooke right here.

    I love a simple banana muffin lathered in butter. Best baked good ever.

      It might change the texture and you may have to add a but more liquid but they should still taste good!

    Can I be honest with you? I’m so sick of pumpkin and I haven’t had one pumpkin treat this whole fall. Everywhere I turn is a pumpkin recipe, but I will forgive you because yours is a snickerdoodle. 🙂 And I loe snickerdoodles.

    I never tire of pumpkin. Or cookies. This recipe is perfect for me! I have occasionally frozen pumpkin from a can when I don’t have time to make something with the rest. Works fine after thawing once it is stirred.

    I let my girls pick the cookie we were going to make this afternoon and I don’t know if it was the word “pumpkin” or the word “snickerdoodle,” but they were all over this one! So good. The dog enjoyed them too, as he does all things he sneaks off the counter!
    I had to modify a bit: the dough was more of a batter prob bc I used 3 whole eggs instead of egg whites. I added more oat flour and it was still runny so I threw in a bunch of quick oats until it became more cookie doughish. Instead of rolling it into a ball I sprinkled the coconut sugar and cinnamon on top before putting into the oven
    Baked for the recommended time and they came out perfect!!! It’s only bc I’m having a good run with self control that they aren’t gone!!
