Turkey & Wild Rice Soup

Sorry for taking so long to post this! My plan had been to take pictures on Monday morning but I slept in past my alarm and was late for work. I don’t think squeezing a food photog sesh in there would have flown with my boss. So the post got delayed and you got all things pumpkin instead.

You all saved your turkey carcasses right? I don’t know why, but I feel like Dexter saying things like that. Putting all carcasses aside, this Turkey and Wild Rice Soup is all kinds of amazing. It also makes enough to cure world hunger. I wish I could take credit for the recipe or at least for making the soup, but all that goes to my Mom. She’s awesome. We (she) make this soup almost every year but there’s no actual recipe for it so each year it turns out differently. But that’s how it rolls in my Mom’s kitchen. Though sometimes she follows recipes, she also has the ability to just throw things together and they always work.

turkey and wild rice soupI unfortunately do not have the same kind of confidence when it comes to cooking. Baking is a different story. Part of what comes with baking is accepting that your recipes will fail. It’s also far more of a science so too much or too little of something can ruin a recipe. But I understand baking. I know the ratios, how different ingredients react, baking times, pan sizes etc…so I’m not so apprehensive when it comes to recipe creations.

turkey and wild rice soup This is probably the opposite of most people. I have a very scientific brain and do much better with “exacts” rather than just adding things and seeing what happens. I can identify a sweet spice with my eyes closed but savoury herbs and spices? I may as well have my nose plugged because I don’t know the difference. I legitimately spent 30 minutes over the weekend smelling different spices and testing myself. You gotta start somewhere!

Anyway, here is THIS year’s recipe for Turkey soup. Next year’s may be entirely different, but I have faith it will be equally as delicious!

Turkey & Wild Rice Soup

PREP TIME 40 mins
Cook Time 4 hours 0 min
Total Time 4 hrs 40 mins

Ingredients

  • 1 turkey carcass
  • 1 cup lima beans
  • 1 cup wild rice
  • 1 T olive oil
  • 1 large yellow onion, chopped
  • 4 carrots, peeled and chopped
  • 4 celery stalks, chopped
  • 1 garlic clove, minced
  • 1 T dried sage
  • 1 T poultry seasoning
  • 1 T dried thyme
  • 1 T marjoram
  • 2 splashes of white wine
  • salt and pepper, to taste
  • *cheesecloth for straining

Instructions

  1. 1. Soak lima beans for at least 1 hour.
  2. 2. In a very large pot add turkey carcass and cover with water.
  3. 3. Bring stock to a boil and then reduce heat to a simmer for 2 hours. Every once and a while skim the top for fat.
  4. 4. Let cool and then strain through cheese cloth. Set stock aside OR place in refrigerator overnight and skim the fat off the top in the morning. Save contents of cheesecloth until cool.
  5. 5. Once cooled completely sort through cheesecloth to remove the bones and pick out the turkey pieces.
  6. 6. Shred turkey pieces into bite size.
  7. 7. In a large pot, saute onion, carrots, celery and garlic in olive oil over medium heat for about 5 minutes.
  8. 8. Add turkey stock, turkey pieces, lima beans, wild rice and spices to the veggies and bring to a boil.
  9. 9. Reduce heat to a simmer and add in wine.
  10. 10. Cook for 2 hours.
  11. *Because each carcass will be different you may have to adjust the spices and/or add water. If you find your soup needs more flavour add a bit more of each spice. If you find your soup is too thick add in more water.

    This soup sounds delicious! I am the complete opposite and find cooking much easier. It’s funny because my brain is also very scientific and my job requires precise calculations for feeding recipes (I work with preterm babies, so one math error can make a big difference!), but when it comes to baking, my brain doesn’t do so well! My baked goods never come out the way I’d expect. Maybe by the time I get home, my brain just wants to guess at things? Who knows! It’s good to have a balance of people who can bake and people who can cook in the world! Have a great day!

    I much prefer to bake and often joke that my baking never relies much on science. For some reason, I am able to play around, not measure too much and still create the yummy end result. Magic touch? Maybe lol.

    This looks so delicious! We always make turkey soup following holidays, but with noodles. I have to say though, I much prefer wild rice to noodles. I might try to commandeer the turkey carcass this year before my dad gets to it so that I can make this. 😉

    Unlike you, I find cooking SO much easier. Baking is just too exact!

    Ohhh moms, aren’t they the best? I didn’t save my turkey carcass because I didn’t eat normal turkey this year, but this looks totally doable for me to add chicken perhaps? I’m really going to make an effort to make my own soup more often than not–canned soup is fine of course but veryyy sodium-based. Once again, delicious recipe!

    This looks so good. My mind was blown when you talked about saving the turkey carcass, plus I wasn’t going to pack a turkey carcass in my suitcase and bring it back to Connecticut with me. That being said, putting it in boiling water for a few hours doesn’t seem too hard. Maybe next year!

    This looks amazing! I like having measurements too, at least until I’m familiar with something enough to play around with it. Honestly, I’d be totally happy if my husband did all the cooking (he does most of it anyway). I can cook, but I’d rather just get to the eating part 🙂

    my mom makes something similar and she legit takes a WHOLE CHICKEN with other things and boils it for hours in a giant pot that can feed a small village. i’m a terrible cook and need recipes; there are very little things i can make on the fly unless i want to feel my family failed meals.

    Hhaha you’re so cute! I can just picture you sitting down with a bunch of spices in front of you smelling them. You’re right though, you can’t learn if you don’t try! I am no good with mixing spices yet. Or baking ratios. This girl does not have a mathematical brain at all. I can’t even count change correctly sometimes… okay tangent over. This soup sounds delightful. I love wild rice and don’t have it nearly enough.

    Oh wow Davida, this looks so delicious! Unfortunately, we had Thanksgiving out of town so I didn’t get to save the turkey carcass. I’ll still have to make this recipe though; it looks perfect for the cold winter weather we’ve been having.

    I definitely find cooking easier – it’s easier to correct mistakes with cooking than it is with baking!

    Ok, I’ve decided that you need to get picked up by the Food Network so you can be the next Barefoot Contessa/Pioneer Woman, because this recipe sounds and looks amazeballs. (Really, though, all your recipes look and sound amazeballs. Hence the need for the Food Network to scoop you up and turn you into a superstar.)

    I’d planned on saving the turkey carcass so I could make soup over the weekend, but then I got lazy. (We had dinner at a friend’s house, and I didn’t want to schlep the carcass back after having gone to such great pains to schlep the whole bird there.) However! You’ve already inspired me for next year, so it’ll be on like Donkey Kong in November 2014. Turkey carcass of the future, you’ll have a noble purpose! 🙂

    Maybe it’s a Mom thing – my Mom is totally the same way! Even with baking sometimes. Which impresses me… especially since they always turn out!

    I love turkey wild rice soup, by far one of my favorite fall/winter meals. My mom makes the best turkey wild rice soup but like yours doesn’t use a recipe. We make wild rice soup multiple times a year but I have never thought to add beans to it. I might have to try that next time.

    What is it about mom’s that makes them so amazing at improvising in the kitchen? It’s the same in my home. Me, on the other hand? Hopeless at cooking. Like you, baking just makes so much more sense to me… which is funny since science and math were never my fortes in school.

    My mom makes a similar soup in place of chicken noodle when I’m sick. Oh, moms… I will definitely be making this soon with chicken instead of turkey since my turkey from Thanksgiving is all gone!

    Yum yum yum! My mom is really good at baking but I am more of a cooking person. I find it way easier probably because I do it more. My mom makes awesome Finnish bread called Nissu. I’m sure she has a recipe but she hasn’t shared it with me!

    Love any rice soup! I’m definitely the opposite in that I have more experience and feel more comfortable with cooking. This probably has something to do with not having a very big sweet tooth though. Most of my friends are very good bakers however. Thank you for sharing!

    Yay for mom’s cooking! Mine never cooks from recipes! The funny thing is I discovered the magic of Thanksgiving leftovers this year. Have to admit I just used leftover turkey stock but I made a vegetable pasta soup with leftover chunks of turkey and my family and I loved it. We were having some brown rice with our meal so my husband and I tried the soup with rice and we just loved it…and now we’re craving turkey & rice soup! Your (your mom’s) looks amazing!!

    This soup is really pretty! (like, that was my first thought:) And then I looked at the ingredient list and I started to drool … this is a fantastic soup Davida! Hmmm … with soups I’m comfortable with messing around … most cooking I need a recipe though. Baking, ha! I rarely make something according to a recipe! I’m a little lopsided in those areas! 🙂

    This looks amazing, Davida. I love soups like this. I really do like baking and cooking the same. I think it’s more difficult to make up your own baking recipes. I usually mess things up a few times before they’re good enough to share. I think there’s less room for error when cooking because you can slowly add things until it tastes ok. Sometimes when I’m baking, the batter will taste awesome but once it comes out of the oven…it’s a different story.

    Ironically, the family recipe without a recipe is a soup too my mum makes whenever I’m sick. This is such a great idea though. You know why? Because you get to eat ALL the turkey to get to the damn carcass. 😉

    Turkey and will rice soup is one of my all-time favourites! My family has loads of recipes without recipes – my dad’s an avid chemist and a cook, and he loves nothing more than to experiment. Because he worked in an indian restaurant while he was a teenager, we’ve gone through countless (delicious) iterations of curries. The next is never quite the same as the last!

    I love making turkey soup out of the turkey carcass after Thanksgiving. This year, we were away for Thanksgiving, but thankfully, I found some turkey parts at Whole Foods this week and just made roast turkey and stock tonight. Love how comforting your soup sounds!

    I’ll definitely have to book mark this recipe and save my Christmas carcass. It sounds so simple, yet looks quite delicious. I love recipes where you have a gigantic batch and can freeze some for later. I always forget it’s in my freezer and it becomes an awesome surprise when I’m hunting through it for an easy meal. My mom makes turkey soup to, but, it kind of sucks haha. We’ll just have to keep that a secret. She does have this amazing carrot turnip bake that is a passed down family recipe though. I get excited to eat it every holiday. In terms of cooking versus baking, I would have to go with cooking. I’m still learning the whole science behind baking so I have better luck with combining cooking flavours and seeing where it gets me. I generally just listen to my odd cravings and it seems to come out pretty well most of the time. Sometimes it’s beyond terrible though. Ok, world’s longest comment, ever. I’m outtie.

    This is just perfect…especially as the weather starts to cool down! Soups are only bearable to me during cold months 🙂 I love that you cook with your mom. I miss my parents! I’m hoping to get in some good cooking time with my momma when I go home over Christmas Break.

    Even though the words “turkey carcass” just give me the heebie-jeebies (totally a word), the recipe looks delicious! I love turkey soup! I had to laugh at you spending 30 minutes smelling spices … Kevin and I “test” each other on spices just for fun as we’re cooking!     THERE it is!! The recipe I’ve been waiting all week for…only to have just put the carcass (yeah that does sound weird) in the freezer yesterday! Doh! Honestly though, I got some sort of weird virus-y thing yesterday and since the last thing I had eaten before all of that was T.Day leftovers, I knew there was NO WAY I would be able to even think about turkey for a while. So in the freezer it will keep until I’m ready! 🙂 And just FYI, those pictures were totally worth the wait! Gorgeous, m’dear…gorgeous!

    I totally find baking WAY easier. I know what works together. I know how things interact. I don’t have the same confidence when it comes to cooking. I’ve made a few recipes the past couple of weeks that haven’t been hits and it’s a little disappointing!
