Apple Cinnamon Protein Breakfast Cookies + A Giveaway!

I’ve been trying to spread out my recipes and especially my baked goods so I don’t oversaturate you, but these were too good not to share. It also includes a giveaway and I felt selfish not posting this immediately!

I use the term “immediately” fairly loosely here since these PlantFusion samples were sent to me some time ago (sorry!), but I completely forgot about them. Since I am moving in 2 days the last week has been all about purging and organizing my stuff. These happen to be my least favourite activities, but fortunately they’re my Mom’s favourites and she totally saved the day. This has forced me to question 1) why did the cleaning gene skip me? and 2) How am I ever going to live without my Mommy?! Panicking…

Apple Cinnamon Protein Breakfast Cookies

On the bright side in my cleaning escapades I discovered these samples, which also conveniently became my packing sustenance thanks to my non-existent desire to cook. I tried the Phood supplement with almond milk (alongside some yogurt and granola) which tasted great and the 18 grams of protein definitely filled me up. I also randomly had a craving for a smoothie in the middle of winter and mixed the chocolate flavour with banana and blueberries and it was fantastic. I usually stick to my whey protein, but I have to say I was pleasantly surprised by the fact that I enjoyed a vegan protein made from peas, artichokes, quinoa and amaranth. Who knew peas had protein?

The ultimate test for me when it comes to protein powders is how they taste in baked goods. Unfortunately PlantFusion didn’t hold up in my Banana Protein Pancakes, but I gave it another shot in my new breakfast obsession, breakfast cookies. It totally worked and they tasted delicious! It’s officially socially acceptable to eat cookies for breakfast with these Apple Cinnamon Protein Breakfast Cookies.

Apple Cinnamon Protein Breakfast Cookie

PREP TIME 10 mins
Cook Time 22 mins
Total Time 32 mins

Ingredients

  • 1 cup oat flour (ground rolled oats)*
  • 1 cup rolled oats
  • 1/2 cup PlantFusion protein powder (vanilla or unflavoured)
  • 1 T chia seeds
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2 very ripe bananas, mashed
  • 1 apple grated (any kind, no need to peel)
  • 1/4 cup unsweetened applesauce
  • 2 T maple syrup
  • 1 tsp vanilla extract

Instructions

  1. 1. Preheat oven to 350 degrees F.
  2. 2. Line a cookie sheet with parchment paper or a silicone mat.
  3. 3. In a large bowl combine oat flour, rolled oats, protein powder, chia seeds, cinnamon and salt. Mix well.
  4. 4. In a separate bowl combine mashed banana, grated apple, applesauce, maple syrup and vanilla extract.
  5. 5. Add wet ingredients to dry and stir until well combined.
  6. 6. Form dough into 12 medium sized balls, place on cookie sheet and then flatten with palm to form discs.
  7. 7. Bake for 22 minutes.
  8. 8. Remove from cookie sheet and let cool on a wire rack.
  9. 9. Will keep for several days in an airtight container or freeze for several months.

    I’ve never tried Plantfusion, but I definitely have seen it in stores before! These cookies look delicious, although I would have to eat several of them or one giant one to keep me full for breakfast!

    I honestly don’t have protein powder in the house. I never use it. But I really should keep some on hand for the recipes I come across that call for it! Your cleaning gene will kick in by the way simply because you have no choice and will want your life in order, organized and clean just like your mom made it. Trust me, that’s how it worked for me and my house I spotless all of the time. When I lived at home? I didn’t lift a finger.

      Day two in my apartment and it’s a mess…mostly cause we have no furniture so nowhere to put our stuff but I’m really hoping that clean gene turns on soon!

    I actually need to get around trying mine too. I’ve had the chocolate raspberry and thought it was good. I’ve never a big protein drink person though so it’s taking me awhile to get through them.. I should try something like this thoughh

    i’ve always wondered what protein powder tasted like in my baked goods but i’m too scared to screw up a batch. i wish you could just bake ONE thing to test it out!

    Mmmm! Love the idea Davida 🙂 They would be the perfect thing to reach for upon return from my morning run….or afternoon run for that matter! I love that they have protein powder in them, and that they work with that! I dont think you can ever over saturate baked goods, is that even possible? My insatiable sweet tooth says no!

    Ok question – what happened to the protein powder in the other recipe you mentioned? I always just thought of it like, throw the powder in and bake! Haha, clearly that is not true, but now I’m curious as to what happened to let you know the powder didn’t hold up. The picture of the tea (coffee?) and the cookies is absolutely beautiful, ma’am!

      That was whey protein powder vs. this one which is pea, artichoke and grain protein. Whey tends to be easier to bake with for whatever reason! It’s so complicated, eh?

    These look so good! Cookies and Cream sound incredible but I always stick to simple vanilla flavour when it comes to any powders!

    i’ve never tried plant fusion, but i think i would love their vanilla bean protein! cookies for breakfast, especially healthy ones made with oats, sound like a DELICIOUS idea 🙂

      Yup, designer whey will definitely work. That was actually my go-to protein powder until they made it near impossible to find it in Canada 🙁

      I love DW in my banana protein pancakes that I linked to above. My go-to pancake recipe for sure!

    You know my breakfasts are random as hell, so cookies would be totally normal. I LOVE the ingredient list of this and the ingredients which I could totally make do in the hotel!     I’ve never really made breakfast cookies before because I always prefer a sit down breakfast. But lately I’ve occasionally had to have breakfast on the go, so these would be perfect for that!

    Cookies for breakfast are a definite YAY, especially with a cup of tea and those ingredients! I love every single thing you have in that recipe!

    Good luck with all that packing! It feels good to purge but I hate doing it, despite being a neat freak. Although sometimes my neatness consists of throwing things into a closet, out of sight, and preferably not dealing with them. But that’s beside the point. 😉

    Cookies of ANY kind are acceptable forms of breakfast. Duh. So when you actually have some new information for me, I’ll be back to read. Until then, pull it together.

    I cracked myself up at this situation – you bake your yummy food, you take gorgeous pictures of it, and then you take more pictures of it with one bite taken out. How was that one bite? Delish? So creative!!

    I haven’t tried plant power fusion, but strangely enough my grandmother had pea protein powder and had me try it (mixed with vanilla protein powder it tasted fine). I would love to try this because I feel like I shouldn’t be eating so much dairy (whey protein).

    Also I just had a bowl of brussels, turkey and almond butter. I thought you should know that I’m such a freak. I need to reply to your e-mail!!

    Yum!! I love using protein powder in baked goods. I’ve been looking for a non-dairy protein powder. Does this one mix well with just water or almond milk?

    I’m one of those people who is super sensitive to protein powder, especially whey and casein. Hemp is my favorite…i really love adding it to things like balls and smoothies.

    I’ve seen a few other bloggers rave about Plant Fusion but I’ve never had a chance to try it out for myself. I’d love to try it in these cookies..especially for breakfast! 🙂

    These cookies sound delish. But, if I absolutely cannot have banana, can you recommend a substitution? Also, I love Plant Fusion and have consistently used it for my protein shakes over the last five years. It never gets old for me because I switch up my smoothie recipes.

      You could definitely try pumpkin or sweet potato! You may have to increase the maple syrup (or add another sweetener) if you do!

    Cookies for ANY meal! Especially when they are packed FULL of healthy deliciousness like these! 😉 I’ve tried the chocolate and the cookies and cream of the Plant Fusion…chocolate was ok, but I was a little disappointed in the lack of COOKIE flavor in the cookies and cream…womp womp! But I HAVE heard great things about the chocolate raspberry! Actually, Sarah (The Smart Kitchen) is always raving about it!
