Best of February 2014

February 28, 2014

No…I’m not engaged. Susan Miller was wrong. You can stop freaking out Dad. True story, when my Dad read that post he didn’t think to click the link to the horoscope and thought I announced on the blog that I was engaged before telling him. For the record Dad I’m guessing you will know before I do that I am getting engaged and you will always be my #1 guy.

My Dad is also requesting that I put out the word that THM is freaking out on iPads and iPhones so if it isn’t working for you please tell me (or don’t because you weren’t able to read this post).

best of february 2014Back to the whirlwind that was February! Seriously, where did this month go? I managed to jam-pack some major business into 28 days but also seemingly do not remember any of it. I had to go back and read my own blog to remind me. Turns out it was kind of an epic month!

Not surprisingly, your favourites from this month are all sweet. We can thank The Great Valentine’s Day Healthy Bake-Off for that.

1. Black Bean Lava Cakes (gf, v)
2. Mocha Overnight Oats (gf, v)
3. Sweet Potato Rice Pudding (gf)
4. Coconut Oatmeal Lace Cookies (gf, v)
5. Banana Fosters Cinnamon Rolls (gf, v)

Onto my favourites! I had an absolute blast putting together our Full-Course Healthy Valentine’s Dinner with some blogging buds (seriously the absurdity that unfolded in our Facebook messages was insane). Speaking of insanity, I almost lost my mind baking for my v-day bake-off. And then I definitely lost it when I saw how many of you decided to link-up! I’m still on a high from it. I had two other posts this month that I loved but I think deserve some more lovin’. I guest posted for my girl Selena and obviously had to make some balls (go make them NOW) and you might think I’m totally strange for mixing peanut butter, greek yogurt and salmon but trust me on this one, it works.

my-feb-favs1. Full-Course Healthy Valentine’s Day Menu (or for any night of the week!)
2. Chickpea Cookie Dough Truffles (gf)
3. Thai Salmon Salad (gf)
4. The Great Valentine’s Day Healthy Bake-Off

So what’s coming up in March? More than anything I’m hoping for a bit of calm, but knowing my inability to sit still that probably won’t happen. Here’s a few things I’m looking forward to:

coming up in mar1. The arrival of spring! Myself and a few other sneaky ladies have a line-up of recipes that will make you forget winter ever happened (wishful thinking…)

2. A trip! I spontaneously booked a trip this week to see some very special people. Will update you soon 🙂

3. I loved getting your feedback on my post about what blogging has taught me. And in accordance I am going to try and incorporate more blogging tips this year. But first I need to know what you’re looking to learn. Get at me people.

4. ALL THINGS GREEN! I recently discovered there was more to St.Paddy’s Day than drinking and 4:00 PM blackouts. I’m thinking of possibly hosting a St. Paddy’s Day link-up featuring green foods. What are your thoughts? I hear it’s lucky to eat broccoli on March 17th…

What’s your February highlight? Any interest in a St. Patrick’s Day link-up featuring green foods?!?!

That Great Valentine’s Day Healthy Bake-Off sure was fun! Sure – would love another in March – specially with green food! 🙂
Those Chickpea Cookie Dough Truffles are on my to-make list, I cannot wait to fool my daughter into eating these! The joys of parenting – speaking of which, your poor dad – glad his small freak out was for no reason!
    Hope your weekend is wonderful!

Haha I would love to see a link-up full of green foods! Or just one of your green recipes. Either one would be entertaining! And I love that you’re thinking of giving blog tips! You’re totally on the way to, “I knew her when…” status so I fully support that! Have a wonderful weekend, and make sure you’re not sitting still to do things you love doing and not just driving yourself crazy with stuff, stuff, stuff (like I often find myself doing)!

I still have those black bean lava cakes on my mind; just waiting for the right moment to make them. Perhaps this Monday when I will most likely be snowed in once again. In my opinion, Spring begins tomorrow – snow has no place in my Spring.

March means that winter can just die, right? Seriously, can’t wait for some Spring weather. And considering that the Valentine’s Day bake-off went so well, why not through a St. Pattie’s Day one in there? I think it’d be fun…and actually get me recipe-developing again 😉

I would love for you to do a green linkup and I can pin half the recipes to try out, only to end up not going through with it because I know Charlie will cook. I swear if he just quit I would be so much more adventurous in the kitchen, but hey, I’m not complaining- I will just start emailing him recipes I want him to try- that would be a sure- fire way to get him to quit cooking.. 🙂

I hope you mean you’ve booked a trip to Colorado!!! 😉 Because you know you want to! But seriously, wherever you are going, I hope you have a great time. It’ll be a much deserved break! I really need to go back through your recipes and make some. If you have any desire to make a vegan and gf bran type muffin with raisins I’d be all over that sh*t! When I lived in Philly, the Starbucks’ there had these amazing, massive bran muffins with jumbo raisins and crystallized sugar on top. They must have had illegal drugs in them because they were amazing. Maybe I’ll get around to figuring out how to make some, I don’t know, probably not. Anyway, expect an email coming your way within the next hour or so! Have a great weekend!
