Thai Salmon Salad

As it turns out, the government has the right to institute statutory holidays whenever they feel like it. Having lived away from the province for 5 years, I genuinely had no idea that yesterday was Family Day in Ontario. An arbitrary holiday enforced a few years ago to celebrate our families/help people get over their seasonal depression.

thai salmon saladTrust me, I am not hating on holidays, but a memo would have been nice! I prepare for holidays as though the apocalypse is coming, by buying ALL THE GROCERIES. Unfortunately for me I was the only person unaware that Monday February 17th was Family Day and that all grocery stores would be closed. This meant that oatmeal would be my main source of sustenance for breakfast, lunch and dinner.

But if there’s a holiday, I will celebrate! I figured the best way I could show my family how much I loved them was by raiding their fridge. I know…I’m a good daughter. Thanks Mom and Dad for saving me from starving on Family Day and you’re welcome for eating all of your food.

thai salmon salad 2Remember that time I was hating on my brother for taking toilet paper from my parent’s house? I get it now…I left my house with more food than I would have if all of the grocery stores had been open. So here’s the Thai Salmon Salad made from the contents of my parents fridge and the only other food in my house besides oatmeal, peanut butter.

Thai Salmon Salad

PREP TIME 10 mins
Total Time 10 mins

Ingredients

  • 2 6 oz cans of salmon (I used Alaskan Pink Salmon from Trader Joe's), drained
  • 2 celery sticks, diced
  • 2 green onions, sliced (only white and light green parts)
  • 1/4 cup thai basil, chopped
  • 1/2 cup 0% fat plain greek yogurt
  • 1 1/2 T natural peanut butter
  • 1/2 garlic clove, minced
  • 1 tsp minced ginger
  • 1 tsp tamari (or soy sauce)
  • 1/2 tsp sesame oil
  • juice from 1/2 lime
  • 1/4 tsp sea salt
  • 1 tsp sriracha (optional)

Instructions

  1. 1. Remove drained salmon from cans and add to a large bowl. Using a fork, break up salmon until flaked and chunks are removed.
  2. 2. Add celery, green onions and thai basil.
  3. 3. In a separate bowl mix greek yogurt and peanut butter. Stir in garlic, ginger, tamari, sesame oil, lime juice and sriracha.
  4. 4. Add wet mixture to salmon mixture and stir to combine. Add in salt.
  5. 5. Garnish with chopped peanuts and green onion if desired.
  6. 6. Will keep in fridge for up to 5 days.

    Dude. I will be making this for lunch this week or next week….except with tuna- Adding peanut butter and basil to it? Genius!!!!! I had intended to use the tuna to experiment with the curried tuna patties in salad/dip form but eff that.

    Raiding from mother’s kitchen was one of my favourite things..alas now it ain’t the easiest thing to do 🙁

    Hahaha, I am so used to this, since in Europe grocery stores are closed on Sunday’s. So usually I end up emptying my fridge these days and getting creative (or hitting the grocery store hard on Saturday). But girl you really had me with the title of this recipe: salmon and Thai! Two of my favorite things when it comes to meal time. (she said, while munching on a salmon patty) This salad will definitely be reproduced as soon as I come across canned salmon here in France.

    Raiding my parents fridge – Every.single.time I visit them! They just have way more exciting things in there than I do 🙂

      Your grocery stores are closed on Sundays?!?! I’m sorry I read that and my heart just stopped….ahhhh that’s the only day I go grocery shopping usually unless I am in an emergency situation with no peanut butter or something. That’s so interesting!

    I’m pretty sure Alberta has had family day forever, making me an expert — so of course I’ll explain it to you! Family day is all about celebrating the great things about family, which naturally involves raiding your parents’ kitchen for goodies. You did good, kid.

    this recipe is super creative and interesting! I loooove thai flavors with pretty much anything (I just discovered a thai chicken pizza at a pub nearby…. omg) so I think this is a must-make for me. also… I want Family Day.

    Hmmm Family Day….we don’t have that here! It sounds like it should be a nice day filled with lots of family activities and good food and company. But closing the grocery stores sounds suspicious! At least you got a great recipe out of it! Salmon is my faaavorite 🙂

    Apparently Family Day has made it’s way all the way to the West coast. My parental units live in BC and they just had it too!

    Haha we’ve got the opposite problem. It’s reached the point of winter where my mom doesn’t want to do ANYTHING so she’s always popping up to my room “do you have anything to eat, theres no food in the house”. This sounds like a very interesting salad combo full of lots of my favorite things 🙂

    I’m obsessed with TJ’s wild salmon, minus taking out all the icky skin and bones. This is the msot delish twist on salmon salad–love the addition of Greek yogurt and pb instead of mayooooo!

    I don’t recall celebrating Family Day here in Atlanta…but being with your family – even if that involves raiding their fridge sounds like a plausible definition!

    Well I like basically every other kind of “salad,” so I bet this is delicious too! Minus the pb of course! My parents never have food, even when I come to visit, so Family Day would be lost on me in that department.

      the other day I was at my parents and I was like “what’s for dinner” and my Mom was like “there’s some chicken breasts in the fridge if you want to make something with them” and I was like “uhhhhh no I came up here to be fed…”. She was not pleased…

    I’ve never heard of Family Day! We had President’s Day yesterday so a lot of people had the day off, but stores were open. 🙂 One of my favorite lunches is salmon salad sandwich. I just discovered that using hummus instead of mayo makes a great (and less calorie) substitute.

    So I became a vegetarian/sometimes vegan out of choice, but when I was little, my favorite thing was tuna. I would eat tuna every day for lunch and I’m sure I still have abnormal amounts of mercury in me. Every once in a while I crave fish, so this looks SO good! I wish there was a good vegan alternative for it! Vegan “fish” = horrific

    I can’t believe they close down all of the grocery stores on a holiday. That never happens here. Most of them close on Christmas Day but there is always at least one open. At least it was like an oatmeal cleanse?

    Anyway, this salad looks fab! I’ve been trying to sneak salmon into my lunches since Brandon won’t eat fish and I’m always looking for new ways to enjoy it.

    Gorgeous photos lovely! I have never tried canned salmon before! Honestly not a fan of canned tuna but I pass by that canned salmon in Trader Joe’s every time I’m there and I think your photos just convinced me to buy some 🙂

    Haha I love it when a lack of food forces me to be creative with my meals! This tuna salad is something I would never think of, but it sounds delicious (subbing sunflower seed butter for PB, of course).

    I don’t understand Family Day either but I heard it was just added because February was lacking a statutory holiday?

    ohhhggmgmmgaeeynnessss!!! Sorry about that, ahem ahem. This looks like MY KINDA salad~full of my favorite ingredients. Seriously, great job with the ingredient combination as I can tell it’s delicious. 😀

    And I have no idea what family day is, but I really want that here! Of course, the US is so busy with making life happen that I don’t foresee family day being established any time soon, haha.

    And I love to go through everything in my parents’ house, lol! Although my mom automatically sends me home with bags and bags of food, veggies, etc., I still open every cabinet door and fridge at random times when I’m visiting. 😛

    Family Day = the best excuse they could come up with to help ward off winter depression. AKA: we-all-need-a-vacation day.
    Buuut salmon salad! That looks so good. I never think to buy canned salmon, even though I love it. Next time it’s on sale…

    No idea what family day is, I don’t think we celebrate that in the US, but we should!! I like the peanutty spicyness of this recipe, I’d sub the salmon for pasta and ditch the yogurt to make it freak friendly..I mean vegan friendly. I want peanut noodles now..ohh yum.

    Ah! This looks awesome. I looove salmon. Been trying to think of new things to do with it. I’m doing the dairy-free thing at the moment, though. Wondering if you might have any ideas of what I could sub for yogurt. I’m assuming that it’s taking the place of mayo in traditional salads like this but I’m struggling to think of healthy alternatives.

      Hi Sabrina! You can definitely find some healthier mayos out there and they would be a perfectly fine alternative! Avocado may also work or you could try a dairy-free yogurt like almond yogurt or coconut yogurt. I can’t say for sure but if you give it a try let me know! Thanks for stopping by 🙂

    I saw this on Foodgawker and was like, wow, that looks amazing – someone had their thinking cap on! And then I was like, oh my gosh, its Davida! This salmon salad looks SO good, I really want a bowl for breakfast. Yum!

    I understand where you are coming from – a holiday and the stores being closed – but I think it is cool that the stores closed. Here in the ol’ good USA – the stores NEVER close unless it is Christmas. But you can still go to Dunkin’ Donuts and the gas station. Weirddddd.

    This seems to happen to me al the time. I forget its a holiday and that certain stores will be closed. Of course it is always when I desperately need something. Lucky for you that you have your parents fridge to raid 😀

    HOLY F that looks amazing. I love Thai-anything. I would never think to make that on my own… now I have to go to TJs and get canned salmon.

    When I was in college, my mom would ask me want I wanted to eat for the next month, then would make all my meals and freeze them for me. I started cooking on my own a little bit and would raid her kitchen, my grandparents, and my dad’s. I still raid my grandparents when I go over there – my gram is a health nut too so I take cool new things she is trying!

    I don’t normally raid my parent’s kitchen, but I do all snoopy and start grazing before/after dinner…which is usually why I’m there! They typically have things that I don’t normally buy…sugary cereals, cookies, candy…so I’m always grabbing a bite here and a nibble there! So in a way I’m still getting free food out of it…call it a mini-raid! Haha!
