Spinach & Artichoke Omelette + Lékué Omelet Maker

Yes I am aware I spelled “omelette/omelet” differently in the title of this post. I spent way too long researching the correct way to spell it and in the end gave up. For the record, it’s derived from French so it really should be “omelette” but I’m also doing a review of an “omelet” maker so you’re just gonna have to roll with me on this…

I’ve decided I could never date somebody who cooks. If my significant other ever tried to boss me around in the kitchen then we would have one serious problem on our hands. The kitchen is my happy place, but that doesn’t mean I can’t become a total bossy-pants if someone tries to take over.

I was impressed but also a little worried about how we’d manage having two cooks in the kitchen (yes I was thinking about our future on night #1). This never ended up being a problem because I quickly discovered that C’s “go-to dish”, Brie and Mango Chutney was actually just store-bought chutney on top of a wheel of brie. I can legitimately hear C yelling at his computer claiming he is so much more capable as I type this.

True, my man is much more capable. He is the king of eggs. This I appreciate because like my pancake flipping skills, eggs are not my strong suit. I can just barely scramble eggs let alone make an omelette! Perfect segue into…my new Lékué Omelet Maker! This thing is seriously amazing. I can go from egg carton to table in under 3 minutes. Winning!

lekue-omelet-cooker3Before you go all “microwaves will kill you” on me, I’ll tell you to shut off your computer and throw your cell phone out the window. Glad we got that out of the way. Now I can tell you about my awesome new toy. Basically you throw everything into this 100% platinum silicone mould (BPA free too!), stick it in the microwave and zap, omelette.

Pretty cool right? I don’t need no man to cook my eggs (okay that sounded bad…) with my Lékué Omelet Maker!

Spinach and Artichoke Omelette

PREP TIME 2 mins
Total Time 2 mins

Ingredients

  • 2 eggs
  • splash of unsweetened almond milk
  • 2 artichoke hearts, drained and chopped
  • 1/2 cup spinach

Instructions

  1. 1. In a large bowl add eggs and beat for 30 seconds until yolks are broken up. Add splash of almond milk.
  2. 2. Pour half of egg mixture into Lekue Omelet Maker.
  3. 3. Add spinach and artichoke on top of egg.
  4. 4. Pour remainder of egg mixture on top.
  5. 5. Close and place in microwave for 1 minute and 30 seconds.
  6. 6. Open microwave and flip over. Microwave for another 40 seconds.
  7. 7. Remove from microwave and serve.

    I would buy that omelette (CORRECT WAY OF SPELLING) purely for the name. Lekue. That just sounds amazing. (I don’t know how to do those fancy accents on the vowels. #computerfail).

    My egg making skills are epic. Even microwaved ones. Just not hard boiled. Never find the happy balance there.

    My mom gave me an electrical omelet maker – same concept as the Lekue – as what I intend to be an omelet turns into scrambled eggs when I begin flippin!

    I don’t need no man to cook my eggs!! YES!! LOL.
    I like to own my kitchen. Sandro is always teasing my by joining in and saying ‘I really like that we are so close together in the kitchen now. So fun and cozy, right?’ and I start swearing. So yes, my kitchen must be ALL MINE.
    I need this omelette maker. I actually was called the Omelette Queen before so it will look like I betray my pan and readers, but this is so quick…..and so perfect for my crazy life!

    I have a really weird texture thing with eggs in that they always need to be scrambled up (with stuff mixed in, never plain!). Because of that, I only know how to make scrambled eggs.
    Riley is the real cook in our house as I’m sure you know. I’m totally happy to give up the kitchen controls so I don’t have to do it!

    Oh I love some fancy microwave cooking appliances – they make my life so much easier. Jays mom recently used a similar thing to make omelettes in the microwave and they were super delicious. What I also love to do is making a steamed egg in a bowl. Reminds me that I did not have a good egg dish in a while and I should really make one soon!

    I am pretty much a solo cook, although John pitches in from time to time. It’s actually great for us that I finally decided to shoulder this responsibility. Everyone in our families knew (or found out) when we were first dating that I didn’t cook. It became the constant line of questioning: “But, who cooks?” “But, if you get married, who will cook?” “But, how do you eat?” Relatives were legitimately convinced that this fact alone was enough to doom the relationship. For the record, we did just fine. We both had super low standards for meals, so we happily ate what can only be described as college food until about a year ago when I started really cooking consistently.

    I want this omlette maker except Miguel would get mad because he is the omelette king…..supposedly. As far as two cooks in the kitchen goes, that’s usually not a problem because he is in charge of breakfast and I do all the other cooking–and I am more than ok with that!

    Totally obsessed with the only 4 ingredients thang going on here. Omelettes are the best…and a total life saver when dinner recipes fail! Not that it ever happens to me…..

    I am pretty good with eggs, and while I like to cook, Matt is the better ‘chef’. But I am the better baker! This omelettttte looks yum! (I hate spelling that word!)

    I am a solo cook, mostly because I don’t let my husband help…I guess I have control issues in the kitchen, though I do let him do the dishes 😉

    It’s always been ‘omelette’ to me :-p And Eric is definitely not a cook. When we first started dating he would actually make us omelettes and he can make a good stirfry, but once we moved in together he happily handed the reins over to me…which is fine, because I work best solo :-p

    Hahaha I love your point about the microwave-phobes! I figure if I use both my microwave and traditional cooking methods I’m hedging my bets enough 😉 That omelette maker is a kitchen gadget I can DEFINITELY justify. On the wishlist…

    Thanks for making me smile this morning! Loved that you wrote you could never be with someone that could cook or tried to cook as much as you! TOTALLY can relate. It sounds good for about a second and then when you envision someone telling you what to do in the kitchen…oofta, not good. I would not like that! This omelette sounds nothing short of amazing!     Oooh girl, give it a few years and you’ll marry anyone, the only requirement being that he can cook 😉 I’m so thankful that the nights I’m too tired or have no motivation to cook, Kyle jumps right in and makes a tasty dinner! Granted, it’s usually tacos but I’ll take what I can get 😉 And now you’re telling me I can make omelettes in the microwave – quick dinners here I come!

    I NEED one of those. Chris likes to make omelets but I find it a chore – with that even the boys could make their own!! I can make perfect hard boiled eggs but that is my top egg skill – I think I better just buy one of those toys and move on!!

    Oh gosh, I totally need one of those! I’m terrible at flipping eggs, pancakes, etc.! My husband is way better at it than me! I always call him to do the flipping! Ha!

    I eat eggs probably once/month or less, but this omelet looks tasty! My husband and I switch on and off with cooking most nights, but there are a few meals we cook together, or he does the prep work and I do the cooking. I’m pretty good at making eggs most of the time, but my husband makes killer omelets!

    A recipe on THM with ingredients that I can count on one hand? Hell must have frozen over 😉 As bossy as I can be, I have no problem handing over the reigns when it comes to cooking — probably because it’s not something that I really enjoy. Baking, on the other hand? Its my way or the highway…

    C’s Mango Chutney recipe is freaking hilarious. He should try out for Iron chef, right now! That’s a handy little gadget you’ve got there. I suck so hard at making omelettes! They always turn into “scrambles” because I’m impatient 🙂

    My hubs is perfect in the kitchen! He thinks he knows nothing so just takes directions. But he actually learns how to do stuff, and then can do it alone! It’s awesome!

    I could go for one of those! Does it clean easily afterwards? Whenever I try and microwave eggs they always seem to stick on the bowl terribly. I think it takes me more time to scrub the container than it does to just cook an egg on the stove!

    Ahhh no wonder I always get confused with omelet/omelettea irfahpfiahewhfiaew f, however you spell it. Haha! Spelling is usually my forte but that word humbles me all the time. 🙁
    And wow, I love this recipe! Artichoke is one of the yummiest things to grace the Earth and I can’t get enough of it. Also, I’d love it if Greg was a great cook/baker, but when I have someone else other than myself in the kitchen I get stressed. I think it goes back to the way my mom was in the kitchen, so I’m the same way…It has to do with who does what and when, because I’m terrible at delegating things so I’m just like, “I’ll just do it”. Oops. However, if I have one of my girlfriends who’s a champ at baking, then I actually have a blast. 😀

    I wished my man could (or would) cook – I think he doesn’t venture on purpose. I don’t like the burden on my shoulders always.
    My omelette skills though are egg-celent! I love making omlettes, frittatas, scrambles. But I’d like me one of those omelet makers to make my life even easier.
    Your recipe gave me the idea of using TJ’s spinach artichoke dip in an omelette !

    I am a solo cook because I am a control freak. I did supervise J making hummus though because last time he tried to make his own he used uncooked chickpeas and when he showed me his “tahini” it was a jar of sesame seeds. He is good at making guac though so whatever, I’ll deal.

    I actually saw this at Sur La Table and thought about buying it… I am dying at the microwave comment. I hate people that say that. Also I hate that in NYC no one has a microwave or toaster. Like how can I make toast?

    Oh also – this has all of my favorite things (eggs, artichokes and spinach). I also think I remember you and C telling me about his mango chutney brie haha…

    I can definitely butt heads with my mom when we’re both cooking in the kitchen. I much prefer to defend my territory when I’m cooking, and I’m happy to let her do the same when she’s cooking (usually..) 😉
    What a great idea to put spinach AND artichoke in an omelette. I’m so trying this. I do like “omelette” better than “omelet”— it’s cuter when it’s French.

    I need one of these! As much as I pride myself on my cooking skills, I suck at omelettes!

    Also I always thought I only like guys who can cook, but JZ can’t even cook an egg hahaha. I actually kind of like it though because it means he doesn’t really notice if I cook something that’s a bit sub par – no matter what, he still thinks it’s great. 😛

    Haha, you’re so funny! I can make scrambled eggs but my hubby can’t. My hubby can make eggs over easy and I can’t. Match made in heaven? 😉

    I never really mastered the whole eggs thing. My education on cooking them was scrambling in the microwave. Not the best results. I like to think I improved slightly as I got older but i would much prefer to leave it to the professionals!

    Oh WOW I need to try that omelet maker asap! I love lekue products. And omelets. So this needs to happen NOW.
