Gluten-Free Orange Cranberry Scones + My Pros and Cons of Ebook Writing

Confession time…I look like a sloth right now. I’ve been wearing the same clothing for well over 24 hours and I cannot remember the last time I showered. Sorry if that was TMI, but I suppose this is just a reality of giving myself less than 2 weeks to design and publish an ecookbook.

I put off the design of the book until after the recipes were finished because I am not comfortable nor do I enjoy any kind of design. I appreciate the result, but the amount of time that goes into choosing a font, background, appropriate text etc…is enough to make your head spin. I have gone through at least 5 different design and cover attempts and I still don’t know if I’m happy with this one. If you’re interested in some of my draft covers, check out my Facebook Page. GF Breakfasts THMSpeaking of Facebook thanks, you guys were the inspiration behind these scones. I was drawing a major scone blank so I asked you what you wanted to see, and Orange Cranberry Scones were the clear winner. Someone mentioned white chocolate too (you are awesome!) which we all know isn’t healthy but I felt a compulsive need to break the rules. If you don’t feel that need, feel free to omit.

Gluten-Free Orange Cranberry SconesNow that we’ve discussed the scones, I want to share a bit about my experience so far with building the ecookbook. As I mentioned last week, more concrete details on how to do everything will come AFTER it is published so for now you get my emotional musings.

Let’s start with the good. One of the biggest pros in writing the ecookbook is that I have become far more proficient in my food photography. When you have 10+ recipes to shoot in a week, you have to be on point. I have a couple pictures in there that I don’t LOVE but for the most part I’m proud of the work I produced. I have a much better understanding of light, props and colour palettes. Practice doesn’t make perfect but it certainly brings you closer!

Despite my dislike of book design, I have gotten MUCH better at it. InDesign (the adobe program I am using) is not the most intuitive but now that I’ve got the hang of it, it is much easier. A part of me wonders how the book would turn out if I had opened InDesign more than a month ago, but I guess I’ll never know…YOLO.

Out of necessity, I developed a gluten-free flour blend which has literally become a godsend.

Lastly, I haven’t had to worry about what I was going to eat for breakfast for the last two months.

Gluten-Free Orange Cranberry Scones 2Okay, let’s discuss the cons. I’m finding it hard to limit my words. There’s so much I want to say about each recipe, and while I plan to include some text, the point it that it’s a cookbook so the recipes need to take precedence.

In addition, blogging and Kewaza have had to be put on the back burner. Along with my social life. I’ve tried to manage some sort of balance, but the truth is that the cookbook has very much taken over my life. If only you could all see what I look like right now…snapchat friends, I apologize.

Figuring out things like ecommerce and taxes has been one steep learning curve and while I wish my hour long conversation with CRA could have been avoided, I’m happy to say I am slightly smarter as a result.

And lastly, I am SO over breakfast food. Breakfast for dinner is no longer a novelty. I honestly don’t want to look at another egg…

Lucky for you, that means you get scones today! I’m patting myself on the back for that horrific segue. Alright, its time to shower.

Gluten-Free Orange Cranberry Scones

PREP TIME 20 mins
Total Time 20 mins

Ingredients

  • 1 3/4 cups gluten-free flour + 1/4 more for sprinkling*
  • 1/4 cup coconut palm sugar
  • 2 tsp baking powder
  • zest from 1 orange
  • 1/2 tsp salt
  • 1/4 cup cold butter, cubed
  • 1/4 cup cold 0% fat greek yogurt
  • 2 large eggs
  • 1/4 cup orange juice
  • 1 tsp vanilla extract
  • 1/2 cup dried cranberries (unsweetened preferred)
  • Optional: 1/3 cup white chocolate chips, melted-for glaze**

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a large bowl combine 1 3/4 cup gluten-free flour, coconut palm sugar, baking powder, orange zest and salt.
  3. Add in cubed butter and greek yogurt and either using a pastry cutter or your hands (get in there!) combine butter and yogurt with flour mixture until crumbly texture is reached. Should have the consistency of small peas.
  4. In a separate bowl combine eggs, orange juice and vanilla extract.
  5. Add wet ingredients to dry until combined.
  6. Stir in dried cranberries.
  7. Shape dough into a ball and drop onto a lightly floured surface. Add more flour to top of ball and additional flour underneath if sticking.
  8. Roll out dough into a large circle that is 1 inch thick. Dough is a bit tricky to work with but have patience. Add additional flour if still really sticky.
  9. Cut into quarters and then cut quarters in half to make 8 scones. If they lose shape, just re-shape with hands.
  10. Place scones on a parchment or silicone lined baking sheet and bake for 15-20 minutes (mine took 17).
  11. Let cool completely if icing with white chocolate or serve warm.

Notes

My own gluten-free flour blend will be included in the ecookbook. Otherwise use any GF flour blend that includes xanthan gum and if not, add 1 tsp. OR use whole-wheat flour instead.
*For white chocolate glaze, melt white chocolate and add to a ziploc bag. Cut a small whole on the corner of the ziploc bag and squeeze out in a zigzag pattern across each scone.

    I do not have a good eye for design (not even a little), but I really want one of these scones! Isn’t there something else I can do?? Actually these are kind of perfectly timed. I’m working on the menu for a brunch bridal shower I’m throwing next month and I feel like these would be a perfect addition! And I mean, I should probably test run them so maybe I’ll get one as soon as this weekend. 🙂

    In other news I’m sad you are sick of breakfast food but so excited for you that you’re done (or almost done) with this process. I feel this is the perfect example of deciding to do something and just doing it. I’m seriously blown away by how quickly you’ve made this happen. You’re amazing!

    Your scone photo is gorgeous, so I would say definitely JOB WELL DONE. And I think the design part would be the part I struggled with the most if writing an eCookbook. But think of how much knowledge you will have gained after powering through!

    I cannot wait until I get dat GF flour blend on my hands.

    Also I think it’s funny that you don’t think InDesign is intuitive because I think it is/is a really good program, but to each their own 🙂 I’m not the best at picking out fonts that don’t look like shit & look okay with other fonts.. font pairing is not my strong suit. But my friend is really good at it so I just go to her for design advice lol

    If these scones are the outcome from your lack of showering, then I suggest you roll some dread locks in your hair and put on a parka because these look amazing!! I LOVE scones, like LOVE them. While I don’t eat white chocolate, I think it’s totally necessary with these flavor combos. I’m coming over for breakfast…for life. The cover looks fantastic..just think about how amazing this will feel when you are done. I am legit proud of you.

    I’m impressed, lady. When you told me that one day you were shooting 3 recipes in a day, I kind of had a mini panic attack for you — couldn’t imagine considering sometimes I have a hard time bullying myself into shooting two recipes a WEEK. But I guess when you gotta get er done, you get er done. It’s going to be brilliant and I can’t wait to see! 😀

I am a last-minute kinda person too, and truth be told I didn’t even EVER open inDesign before creating my cleanse ebooks, I am just lucky to have a lot of graphic designers within arm’s reach of me, hehe. I love the cover you came up with… what about maybe putting your logo on it somewhere?! PS we need to be snapchat friends. I frequently look like a sloth.

    I’ve never had a scone before! I’ve always been turned off by baked goods that aren’t soft and gooey…but these look delicious! Orange and cranberry is just always a good idea.

    I’m definitely not a designer either, but then I feel so accomplished when I actually come up with something that looks good! I’ve only made scones once and they were delicious! They’ve been on my “to make” list for a while, but for some reason, anything that involves baking makes me want to curl up on the couch under a blanket and watch Netflix…so I haven’t made them. The good news is that I’M HOME! So we need to catch up once you can take a breath!

    I hope that the cookbook doesn’t take over too much of your life and you’re still able to have some fun! These scones look divine though! I had a mini scone on the plane back from Vegas and it reminded me how delicious they are! (Pause to say that I almost just inserted a terrible TWSS joke here but wasn’t sure if that’d be cool, so if you want to hear my scone that’s what she said, just remind me 😉 ).

    Hello Davida,
    You mentioned being sure to purchase a Gluten-Free flour with xanthan gum in it. I have learned that xanthan gum “binds” ingredients together well. however, I do not know of a GF flour that has it off the top of my head. What GF flour do you purchase? Bob’s Red Mill? Or another kind? I’m interested in what you purchase at the grocer…but also what your GF flour is.
    Also, I’ve tried to just purchase xanthan gum at the grocery store, but didn’t find it. It’s it only found at a specialty store? Also, I’ve heard it’s expensive for a bottle/container. Can anything else, besides xanthan gum be used in it’s place that’s a little more affordable?

      Hi Amy! Yup, you’re right about xanthan gum, it acts as a binder because without the gluten baked goods just fall apart. I personally don’t like Bob’s Red Mill GF flour because I find it has a weird taste. It likely has to do with the fact that one of the flours they use is bean flour which I’m just not a huge fan of. I would recommend Namaste Perfect Flour blend. It’s definitely my favourite on the market.

      As for purchasing xanthan gum, yes it is pricey but a little bit goes a long way. I bought Bob’s Red Mill Xanthan gum over a year ago and I’m only halfway through the package! Guar gum is another option though I suspect it might be expensive too. My upcoming ecookbook will include a gluten-free flour blend which tastes awesome and you can make in big batches to save yourself some money in the long run. It’ll be out on June 22nd.

I will look into the Namaste Perfect Flour blend as well as just “sucking it up” (ha ha!) and buying the xanthan gum, especially if it lasts you that long.     I’ve heard that writing a book is a lot like having a baby in the amount of work it takes and life stuff you give up, like sleeping and forgetting to brush your teeth. I’ve never written a book, but I have had a baby and I can see the similarity.

    Those scones look awesome! Orange cranberry is my favorite scone indulgence. Can’t wait to see what other goodies you have up your (book) sleeve! Ha, I made a pun. Okay, it’s a bad one, but I haven’t had coffee yet.

    Davida, I don’t know if I did something wrong with this recipe, but the dough was more like pudding than dough. It is in the oven baking as I type. I guess we’ll see how it comes out. Could some of the amounts in your recipe be off? I measured everything exactly, as I have made GF baked items before, and if you are off any it doesn’t turn out well. Scones are my absolute favorite, so I’m really hoping these are edible! Thanks for any input.

      Hi Joanne. I’m sorry to hear that! Do you know what kind of gluten-free flour you used? The only scenario I could imagine them not working is if there wasn’t any xanthan gum in the flour since that is the glue that holds everything together. Alternatively, did you add extra flour when rolling it out? If yours was a bit more sticky (even air moisture can affect it!) adding additional flour when rolling it out can really help. Would love to hear you experience so I can make any tweaks, though I’ve made the recipe several times and have never had any issues.

        Davida, I used a homemade blend taken from America’s Test Kitchen Cookbook. It contains white & brown rice flour potato starch, tapioca starch, milk powder, and xanthan gum. I added a good bit, maybe 1/4 – 1/3 cup of additional flour. The consistency was so much like pudding that I could not roll it out. I just dropped some on the pan and cooked them like that. They actually turned out delicious, just not anything Like a scone! I think next time I may add the liquid slower and mix as I go to regulate the amount of moisture. A good excuse to make more! Thank you for your input and your quick reply.
