You can never have too many energy ball recipes… right? These energy balls are delicious year round but especially in spring and summer when you’re craving something a little lighter and fresher.

Whether you are craving a lemon treat or just looking for a healthy snack to have on hand, these lemon energy balls fit the bill! They are super simple to make with just a few key ingredients, they will satisfy your craving for something sweet and they are loaded with nutrients to keep you full and energized.

Ingredients in Lemon Energy Balls

  • pitted dates – I used honey dates but medjool dates work too. Make sure your dates are sticky! If they are dry, soak them in hot water for 15 minutes to soften. Drain the water and use dates as directed.
  • cashews – I prefer using raw cashews in this recipe.
  • shredded coconut – make sure you grab unsweetened shredded coconut!
  • chia seeds – loaded with fiber, protein and healthy fats!
  • lemon zest + juice – the star of the show! Use fresh squeezed lemon juice and not lemon juice from a container.
  • sea salt – optional, but I love the hint of salty mixed with the sweet ingredients.

Ingredient Notes

Dates – I can’t say this enough, make sure your dates are sticky! You’ll also want to make sure you buy pitted dates or remove the pits before processing. I don’t want to be responsible for any broken food processors!

Nuts – I love cashews in this because of their creamy texture and mild flavor but you could swap for a different nut if you prefer.

Lemon – Obviously these are lemon energy bites but if you don’t have any lemon on hand or prefer lime flavored treats instead, you can swap for lime zest and lime juice!

How to Make Homemade Energy Balls

STEP 1: Add the dates to a food processor and process until broken up into pea-sized bits.

STEP 2: Add the cashews, 1/2 cup of coconut and chia seeds and process until well combined.

STEP 3: Add the lemon zest, lemon juice and sea salt and process for 1 more minute or until the dough comes together into a large ball.

STEP 4: Roll into 18 balls and then roll the balls in remaining 1/2 cup of coconut.

How to Store Energy Balls 

After making the energy balls, I recommend placing them in the freezer for 15 minutes to set and then store in the refrigerator! They will last up to 1 month in an airtight container.

*Make sure your dates are sticky. If not, soak them in hot water for 15 minutes to soften and then drain.
