But then I remember that I’m only cooking for 2 (even though 1 of the 2 eats for 5…) and I end up with too many leftovers to handle.

That’s when having good recipes that you can top with leftover chicken come to the rescue. It’s an easy way to add protein and prevent letting perfectly good food go bad.

Something that C and I have been discussing a lot lately is trying to put ourselves on more of a budget. Were not HUGE spenders, but we love to travel and occasionally splurge on new tech so keeping to a tight budget in other areas of our lives is super important. We don’t always succeed, but we do our best.

One way we’ve been able to do this is by eating out less. We literally live next to restaurant row and walking distance from incredible restaurants near the Entertainment District, but we rarely take advantage of the latest restaurant to take Toronto by storm. Why? Because one of the best ways we’ve been able to save is to eat in as much as possible.

We definitely allow ourselves to indulge every now and then, but for the most part we eat almost all of our meals in…when we’re home.

Though it certainly isn’t one of the fancy restaurants in our hood, even frequent visits to chipotle can add up. It’s a cheaper option, but even cheaper is making it at home. You basically get 4x the amount of food for the same price. That’s 4 meals. BOOYA.

It’s budget-friendly, delicious and boyfriend approved.

Copycat Chipotle Chicken Burrito Bowl

  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

  • 2 heads romaine hearts, chopped
  • 1 can black beans, rinsed and drained
  • 1 cup of dry rice, cooked according to package instructions
  • 1 recipe for guacamole (I use my traditional guacamole)
  • 2 cups salsa (I like my homemade pico de gallo or pineapple salsa but feel free to use store-bought if short on time)
  • 1 lime, cut into quarters

For the shredded chicken:

  • 2 organic chicken breasts, cooked and shredded*

Instructions

  1. Add romaine, beans, rice, and chicken to a bowl.
  2. Top with salsa and guacamole.
  3. Squeeze a 1/4 lime into each bowl.
  4. Stir to combine,

Notes

*If not using already-made, I prefer to cook mine in the slow cooker in high for 2.5 hours with a 1/4 cup of Frank’s red hot sauce and 2 tbsp of water. Let cool slightly before shredding with a fork.

    Eating out can get sooo expensive and here recently, with Isaac’s job change, we’ve been eating out way more than normal. It’s something I want to work on over the next few weeks. And hello, these bowls are a great place to start. I love recreating restaurant meals at home!

    Pretty sure if there was a Chipotle in Waterloo, we’d be screwed. Thankfully (unfortunately?) we only have mediocre Mexican fast food here so we always make our own Mexican at home! But I make frequent excuses to go shopping at Yorkdale so that I can grab lunch at Chipotle haha.
