And when things aren’t moving properly down there, I can feel myself get anxious and irritable. If there’s anything that I make a priority for my health, it’s reducing my stress-levels and keep my gut health in check.

Put simply, caring for your health is a holistic thing covering both your mind and your body.

This job isn’t always easy, and the last thing you want is for it to become a full-time job, which is why healthy hacks that make caring for your health part of your lifestyle, are what I’m all about.

Whether it be my five-minute meditation app or sprinkling some Metacucil on my smoothie bowl, if it simplifies my life and makes me feel my best, I’m all for it.

But I’m also learning that health requires baby steps. Whereas putting a boat load of spinach into my breakfast smoothie is totally normal for me, it may seem completely whacky to someone else.

Sometimes it requires being a little bit sneaky…

Which is why I created these High Fiber Cookies! You mean you can have your chocolate and fibre too? Yes, yes you can!

If you want to care for your digestive health, it really comes down to one thing, fibre. A healthy diet includeS 25-38 grams of fibre a day. The average Canadian only gets 14 grams! Without enough fibre, your digestive system will not function properly and may lead to problems like constipation or diarrhea. Yup, I’m going there.

One of the best sources of fibre is from psyllium husks, which when combined with water or another liquid, swells and produces more bulk, stimulating the intestines to contract and helps speed up the passage of stool through the digestive tract. It also helps the other way too because it’s high absorption of water slows things down if you’re having some trouble with diarrhea.

My go-to for fibre has always been Metamucil. It is the only fibre supplement made with 100% naturally-sourced psyllium fibre.  It comes in a bunch of different flavors, but my favorite is the original so that I can sneak it into things without it affecting the flavor.

One thing to also note is that psyllium actually makes a great egg-replacement. So not only does it add more fibre to these cookies, but it also makes them vegan!

So if you’re one of those people who struggles with getting in enough fibre, or have kiddos who fight you tooth-and-nail on getting in those veggies, these High Fiber Cookies are your answer. And if you don’t struggle with getting in enough fibre at least you get some delicious cookies with the added bonus of having great poop! Yup…still going there.

Healthy High-Fiber Chocolate Chip Cookies

PREP TIME 10 mins
Cook Time 15 hrs
Total Time 10 mins
Serves 12     adjust servings

Ingredients

  • 4 tbsp Metamucil Original Coarse Powder
  • 1/2 cup brown rice flour
  • 1/2 cup almond meal
  • 1/4 tsp baking powder
  • pinch of salt
  • 1/2 cup coconut sugar
  • 1/4 cup coconut oil, softened
  • 1/4 cup non-dairy milk
  • 1 tsp vanilla extract
  • 1/3 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees F.
  2. Line a baking sheet with parchment or a silicone mat.
  3. In a large bowl combine Metamucil, brown rice flour, almond meal, baking powder and salt. Stir to combine.
  4. Add in coconut sugar following by coconut oil, non-dairy milk and vanilla.
  5. Add in chocolate chips.
  6. Roll dough into 12 balls and flatten slightly on baking sheet.
  7. Bake for 12-14 minutes or until browned around the edges.
  8. Let cool for at least 20 mins on baking sheet before removing.
  9. Store in an airtight container for up to 3 days.

    These look awesome! I have struggled with digestive issues over the years and have found cutting out (or strongly limiting) my intake of dairy and unhealthy processed foods has helped a lot. I’m all about healthy recipes that are good for the gut. Can’t wait to try these cookies! 🙂
