Which is why I created these High Fiber Cookies! You mean you can have your chocolate and fibre too? Yes, yes you can!
If you want to care for your digestive health, it really comes down to one thing, fibre. A healthy diet includeS 25-38 grams of fibre a day. The average Canadian only gets 14 grams! Without enough fibre, your digestive system will not function properly and may lead to problems like constipation or diarrhea. Yup, I’m going there.
One of the best sources of fibre is from psyllium husks, which when combined with water or another liquid, swells and produces more bulk, stimulating the intestines to contract and helps speed up the passage of stool through the digestive tract. It also helps the other way too because it’s high absorption of water slows things down if you’re having some trouble with diarrhea.
My go-to for fibre has always been Metamucil. It is the only fibre supplement made with 100% naturally-sourced psyllium fibre. It comes in a bunch of different flavors, but my favorite is the original so that I can sneak it into things without it affecting the flavor.
One thing to also note is that psyllium actually makes a great egg-replacement. So not only does it add more fibre to these cookies, but it also makes them vegan!
So if you’re one of those people who struggles with getting in enough fibre, or have kiddos who fight you tooth-and-nail on getting in those veggies, these High Fiber Cookies are your answer. And if you don’t struggle with getting in enough fibre at least you get some delicious cookies with the added bonus of having great poop! Yup…still going there.
- 4 tbsp Metamucil Original Coarse Powder
- 1/2 cup brown rice flour
- 1/2 cup almond meal
- 1/4 tsp baking powder
- pinch of salt
- 1/2 cup coconut sugar
- 1/4 cup coconut oil, softened
- 1/4 cup non-dairy milk
- 1 tsp vanilla extract
- 1/3 cup chocolate chips
- Preheat oven to 350 degrees F.
- Line a baking sheet with parchment or a silicone mat.
- In a large bowl combine Metamucil, brown rice flour, almond meal, baking powder and salt. Stir to combine.
- Add in coconut sugar following by coconut oil, non-dairy milk and vanilla.
- Add in chocolate chips.
- Roll dough into 12 balls and flatten slightly on baking sheet.
- Bake for 12-14 minutes or until browned around the edges.
- Let cool for at least 20 mins on baking sheet before removing.
- Store in an airtight container for up to 3 days.
