Spring is a funny season when it comes to food, don’t you think! In the winter I crave warm, hearty meals like soups and casseroles. Summer has me craving light, refreshing meals like smoothies and salads. But spring? My body doesn’t know what it wants!     Oh my goodness, these spring dinners look awesome! The coconut orange baked tofu, vegan Buddha bowls, vegan banh mi, Korean veggie burgers, and kale artichoke pesto pasta are calling my name. I think I’ll have to try the pasta this week actually! SO GOOD!

    My kid loves chicken nuggets but I know they are not so healthy for them. I am so glad I found this healthy chicken nugget recipe!
