Apple Cinnamon Protein Breakfast Cookies



*gluten-free if necessary, or replace with whole wheat flour


  1. Preheat oven to 350 degrees F.
  2. Line a cookie sheet with parchment paper or a silicone mat.
  3. In a large bowl combine oat flour, rolled oats, protein powder, chia seeds, cinnamon and salt. Mix well.
  4. In a separate bowl combine mashed banana, grated apple, applesauce, maple syrup and vanilla extract.
  5. Add wet ingredients to dry and stir until well combined.
  6. Form dough into 12 medium sized balls, place on cookie sheet and then flatten with palm to form discs.
  7. Bake for 22 minutes.
  8. Remove from cookie sheet and let cool on a wire rack.
  9. Will keep for several days in an airtight container or freeze for several months.
