Chocolate Gingerbread Granola Bars

I had every intention of today’s post being part 2 of my baking course recap, but I made these last night and couldn’t handle the idea of keeping them from you. I’d like to believe I am a fan of every recipe I post, but these might take the prize. I legitimately patted myself on the back when I pulled them off. So you’ll have to wait for my drool-worthy pictures of eclairs, fruit tarts and strawberry shortcake. Or just stalk my Instagramchocolate gingerbread granola barsThis recipe was spurred from a realization that came out of my pocket. And I mean my actual pockets. The other day I reached into my winter coat pockets and pulled out SIX granola bar wrappers. Let’s not discuss the fact that I was hoarding wrappers in my pocket, but instead talk about how I clearly have a spending problem. I’ve already talked about my habit of lunchtime shopping trips to scout for my snack drawer, but clearly things have gotten out of hand. And now that my employment prospects are significantly diminished, it’s time I crack down on my spending habits. Chocolate Gingerbread Granola Bars 2Don’t get me wrong, I think it’s awesome that there are so many fantastic companies selling delicious AND healthy snacks. I mean I work for a healthy snack company! But as someone who is attempting to budget and also enjoys baking I knew I needed to take matters into my own hands. I also need to cram as much gingerbread into my face until the season is over, so get used to it. Now my coat pockets are being filled with saran wrap instead of packaging. That’s a problem for another day…In the meantime, make these Chocolate Gingerbread Granola Bars if only to save yourself a little extra cash for your shoe fund.


Chocolate Gingerbread Granola Bars

  • Author: Davida @ The Healthy Maven
  • Prep Time: 10 minutes
  • Cook Time: 25 minutes
  • Total Time: 35 minutes
  • Yield: 10 bars 1x


  • 1 cup oat flour (ground rolled oats)-any flour will work
  • 1 1/2 cups rolled oats
  • 1 1/2 tsp dried ginger
  • 1/2 tsp dried cinnamon
  • 1/4 tsp dried cloves
  • 1/4 tsp dried nutmeg
  • 1/4 tsp salt
  • 2 tbsp ground flax
  • 1/2 cup almond butter
  • 1 tbsp molasses
  • 1/3 cup maple syrup
  • 1/2 cup chocolate chips (I use Enjoy Life dairy-free chocolate chips) + 1/4 cup for drizzle (optional)
  • 1 tbsp water


  1. Preheat oven to 350 degrees F.
  2. Mix together oat flour, rolled oats, flax seed and spices.
  3. Add in almond butter, molasses and maple syrup.
  4. Bring mixture together. It should be slightly wet but sticky.
  5. Add tablespoon of water if mixture is too dry.
  6. Spray a 9 x 9 inch baking dish with non-stick spray or coconut oil.
  7. Spread mixture in pan and flatten with hands making sure surface is even.
  8. Bake for 20-25 minutes. Edges should be golden brown.
  9. Remove and let sit for 20-30 minutes before cutting and placing on a wire rack to cool completely.
  10. If desired melt 1/4 cup of chocolate and drizzle on top.
  11. Store in an airtight container for up to 5 days or in freezer for several months.

    These look great and I am sure that they are soooo much better than a packaged granola bar! I always have the packaged snacks on hand but truthfully, the more I think about it, even my son doesn’t eat them much at all anymore. We take them with us for sports/activities just to have in my bag but really, I make fresher and better stuff or we reach for mini meals/fruit instead. I have Quest bars and the KIND bars but I much prefer a snack of an apple with peanut butter.

      The only thing better than an apple with peanut butter is a banana with peanut butter. By far my fav two snacks! Now if only there existed a portable way to eat them!

    Those granola bars look so good and alot healthier than most packaged ones!! If I have time my favorite thing to do when I feel snacky is to make guacamole, and dip bell pepper strips and a few sweet potato chips in it! I was out of avocados the other day and things were very sad around my place!

    You had me at chocolate… and then sealed the deal with molasses — two things I’m absolutely obsessed with at the moment, if it isn’t evident by the fact that I’ve made THREE batches of chocolate gingerbread brownies. Oops.

    Having an allergy to pesky peanuts means that I usually have to make my own snacks, since, for whatever reason, people like to put peanuts in everything 🙄

    Yum! I don’t even know what to say other than I do need to start making my own granola as well. That stuff is not cheap!

    Haha, pulling 5 wrappers out of my pocket is SO something I would do :). I admit I often buy my snacks, but I do prefer to make them!!! Sometimes time and portability (pre-wrapped, don’t have to worry about traveling with a tupperware) win out, but these look great!!

    I try not to buy snacks but sometimes I run out of time and usually just grab a few Larabars. At the Vancouver airport I saw kale chips… for $10! Hahaha

    You are a recipe machine- Love it! Seeing as I bought molasses last week and actually need to do some food prep- I think I might give these a go!

    Cleaned out my uni bag and had 10000 wrappers there- gum, granola bars, quest bars, protein bars. Ahh. These would be so much cheaper and taste better.

    YUM!! I try to avoid buying too many pre-packaged snacks because like you said, it can get SO expensive! I actually have never made granola bars before though — can you believe it?! I usually just snack on trail mix, fruit and veggies, hummus, etc (grab and go!). these look right up my alley though… I’m definitely gonna have to give them a try. pinning now – thanks! 🙂

    umm hello. These look unreal. I’m obsessed with gingerbread right now too so this is pretty much perfect. I’m also guilty of spending too much money on healthy snack items. You can justify it because you purchasing some form of groceries but really it’s so much better to just make them yourself. For your health and wallet. Thanks for the share!       Thanks Nicole! I’m always justifying it but then at the end of the month I’ve spent more on food than I ever would on clothes or other material goods. If I had just put in the 40 mins to make my own snack I could save so much money. When I looked at the numbers it really hit me. Time to start baking and budgeting!

    I’m a big gingerbread fan so spicing up your granola bars sounds like a great idea! If you have the energy/time to make homemade bars, that’s definitely the way to go. It’s hard not to pay for convenience tho…

    Oh Davida! These look WONDERFUL!! You and Amanda are totally blowing my mind with the chocolate and gingerbread combos! I’ve never actually thought about pairing the two until tonight (since you’ve both been the lucky recipients of a healthy dose of broccoli bombing! ;))

    I really need to get back into making homemade snack bars! I went through a little phase last summer where I was making them all the time, but I slowly got out of it. And then? THEN I discovered Quest bars…and my wallet has been crying ever since! Lol
