Mini Tempeh Pot Pies

Upon cleaning out my pantry the other day I had a major epiphany. I discovered that my life is a lie. Okay, that’s wee bit dramatic, but I have only recently come to the realization that I’ve been living life under the assumption that certain things about myself are true.

mini tempeh pot piesI have always considered myself to be a organized person, and on a relative scale I probably am. But only recently have I learned that my version of neat, which I refer to as “as out of site, out of mind” does not make you organized. Apparently there are people in the world who enjoy colour-coordinating their clothes, or better yet FOLDING their clothes. I hate folding.

mini tempeh pot pies 1Another  interesting discovery about myself is that I am not a morning person. Despite years of claiming to be so, it turns out that peaking at 10:00 AM does not make you a morning person. Quitting running probably had something to do with this. It turns out that not getting up at the crack of dawn to run is kind of awesome.

And then there’s pot pie. I have spent the past 24 years hating pot pie. Why? I’ll never know. My hunch is that my Mom used to make it with peas which I don’t like (clearly I may want to reassess this), but I recently tried pot pie again and it’s almost as good as sleeping in! I thought it would be kind of fun to put a spin on it and make it with tempeh instead of chicken. I figure since I’ve been pushing my boundaries by trying pot pie you can push yours with a little tempeh. Oh and these Mini Tempeh Pot Pies are entirely vegan and gluten-free too. Win!

Mini Tempeh Pot Pies

by The Healthy Maven

Prep Time: 30 mins

Cook Time: 30 mins

Ingredients (Serves: 4)

For the pastry:

  • 1/2 cup almond meal
  • 1/2 cup brown rice flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1.5 tsp olive oil
  • 1 T water

For the inside:

  • 1 tsp olive oil
  • 1 block of tempeh, chopped into bite-sized pieces
  • 1 celery stick, chopped
  • 1 carrot, peeled and chopped
  • 1/2 onion, chopped
  • 2 cups mushrooms, sliced
  • 2 cups veggie stock
  • 1 T gluten-free tamari (optional but highly recommended!)
  • 2 T cornstarch
  • 1/4 tsp turmeric
  • 1/2 tsp thyme
  • salt and pepper, to taste

for the “egg” wash:

  • 1/4 tsp cornstarch
  • 1/4 cup of water


1. Preheat oven to 375 degrees F.

2. Combine all pastry ingredients until it is sticky but not wet (add more water if too dry). Form into a large ball.

3. Cut dough into quarters and using a rolling pin roll out each until at least 6 inches. Set aside.

4. In a medium sized pot heat olive oil over medium heat and add onions, celery and carrots. Sauté for several minutes or until onions are translucent.

5. Add in mushrooms and continue sautéing for several minutes.

6. Add in the tempeh, veggie stock and cornstarch.

7. While stirring continuously, bring mixture to a boil and then lower heat immediately. Mixture should thicken.

8. Stir in spices.

9. Divide evenly between 4 10oz oven-proof ramekins.

10. Cover each with pastry and press into sides.

11. Make “egg wash” and using a pastry brush, brush the top of each ramekin.

12. Place ramekins on a baking sheet and using a knife make a cross on the top of each.

13. Bake for 30 minutes.

    i’ve definitely made a ton of food-related discoveries over the past few years – i always thought i hated mushrooms, but now i honestly can’t get enough of them! i put them on absolutely everything. i also used to think i hated fish and seafood, but that’s now my very favourite food. i think you can train yourself to like certain foods – in fact, these days i can barely think of anything i don’t like to eat! though i’m still working on liking olives… it’s so funny how our tastes change over the years 🙂 these look beautiful as ever davida, great post!

    I’m pretty sure that at least 80% of my current diet is made up of foods that I used to hate. Veggies? Wouldn’t touch them (unless it was corn or potatoes). Plain yogurt? Nasty. Dark chocolate? Gross. Beans? Skeevy… If someone told me that I’d actually enjoy eating healthy, I would have laughed myself sick… Joke’s on me.

    I was always the pickiest eater and wouldn’t even touch avocado until I was like 30. Avocado is now at the top of my list for favorite foods!

    Tempeh Pot Pies? Awesome! I love Tempeh, it’s such a great savory addition to many dishes, but I never thought of using it in a stewy kind of dish. Though I might skip the healthified crust 😉 I just love mine flaky.

    Hahahaha you must have actually been shocked by this! So funny. To be honest, I am always amazed by people who live in a sort of organized chaos because it drives me crazy. My mom is one of those color coding people and while it drives me crazy, I didn’t stop her from color coding my closet when I moved in to this apartment. It’s pretty easy to maintain it. Maybe that’s what you need – someone to set it all up for you, then you can just maintain it. Instant organization!

    Also delicious recipe! I love the idea of tiny pot pies! I really need to get some individual serving size containers that can go in the oven.

    I’ve changed my mind about so many foods I used to hate! Coq au vin, meatloaf, olives… the only foods I don’t like these days are fois gras and asparagus haha.

    I love pot pie! Growing up my mom would always make it and it was the ultimate comfort food. This version looks amazing!

    i used to hate avocados…for years. then when i was in florida last year, my friend bought some and i tried it and it was a party in my mouth. after that, avocados have been a staple in my kitchen since.

    i’m an organized person but only with certain things. work – mos’ def. my house – eh; sometimes. some things. my closet – forget about it. i prefer to call it selective organization.

    I went through an egg-hating phase for a few years until I realized I only disliked them in certain forms. If they’re scrambled up with a whole bunch of veggies and cheese I like them. In omelet form (i.e. not scrambled), I hate them. I also hate runny yolk and would usually rather have egg whites. It’s really weird. I have, however, always loved pot pie 🙂

    Haha! I am the same way! Out of sight, out of mind! I kind of think peaking at 10am means you are a morning person…I mean peaking at 10pm would make you an evening person! I’m just trying to make myself feel better. 🙂 I’ve never been a fan of pot pie myself, but given your experience, I would be willing to try again!

    Oh goodness, I HATED pot pies when I was a kid. Probably because my mom always bought the frozen individual ones, which were horrid…but a good, homemade pot pie is fabulous.
    I was the pickiest eater as a kid, so I’m pretty sure most of what I eat now I wouldn’t have pictured myself eating. Veggies, tomato sauce, beef, tofu, beans…all stuff you wouldn’t have gotten me to touch as a child.

    Such a cute recipe! Beautiful photos as well. I always thought I hated hard boiled egg yolks until a few weeks ago. Now I crave them! I also thought I hated greek yogurt. Then I started adding raw honey to it and fell in love.

    When I was a wee won I hated coconut…OHHH how happy I am my taste buds improved!! LOVE THAT STUFF NOW! I am most definitely a morning person, I am up and at em by 6 most mornings…7 at the latest. OH MY these pies look so good. I have been trying to find a decent tempeh recipe..BOOM MAKING THIS!

    Here is why we are the same, and ultimately long lost besties: I too have hated pot pie for the past 25 years because I HATE THE SHIT OUT OF PEAS. Effing yuck, getthatshitoutofmymouthwhatthefuck! I too have stopped running and I too am NOT a morning person. There is nothing that sounds fun about getting up at the ass crack of dawn to go murder my knees on some hard as fuck asphalt (not sure how Meghan does it). That said, I color coordinate my closet (ROYGBIV all the way) and I did it to Isaac’s too – I have a problem. Oh and I like my shit folded a certain way and I fold my underwear. I know, weird. I’m gonna have to try these some time, sans peas. They look delish and anything you put in your mouth, I wanna put in mine. Was that too far? Should I have stopped a long time ago? #BBM2014!!!!!!!!

    I’ve had the most intense craving for chicken pot pie lately… Ever since the cold winter weather graced us with its presence. My momma used to make (aka warm up from frozen) chicken pot pies – they were SO good, except the little pearl onions, I always picked those out 😛

    I don’t even know that I have ever had a homemade pot pie, but this looks great – I love tempeh! I used to really dislike kale, but luckily, I’ve grown to love. I also used to really dislike oatmeal, and thankfully, healthy living blogs helped to conquer that too. Now, kale and oatmeal are some of my favorite foods.

    The peas might be my favorite part, I love frozen peas!! I have always liked pot pie but this vegetarian version with different topping sounds really good. I have been trying to eat less meat and this would be a great recipe to add to my dinner list!

    Don’t even get me started on my list of things I thought I hated…yet ended up loving! I could list every vegetable, nuts, nut butters..the list could go on!

    Pot pies used to be a staple in my home- made of chicken. I remember having a yelling match with my mum as a kid telling her the frozen microwave kind tasted better than hers. Oops.

    I hear you! I have a pile of laundry just waiting to be folded – It’s on my to-do list for tonight but clearly I’m procrastinating and reading your blog instead of folding clothes and taking a shower, as I soak in my post-workout sweat. Ha!

    I feel pot pie deprived because my hubby doesn’t like peas or cooked carrots, though I think I might try to make it sans peas and just sneak the carrots in one of these days. And YAY for a savory vegan recipe being on your blog today!

    I am obsessed with pot pie! I can’t believe you went 24 years hating it! Your version looks amazing. I love the healthy crust and tempeh.

    I used to think I hate brussel sprouts until a few years ago but that’s just because my mom always bought them frozen and then boiled them. Blech. They are much better fresh and roasted! I love them now.

    Those are fun discoveries! I LOVE organizing…wish I could make it a job…and I love my mornings. Part of me wishes I could be a night person so I could stay up with my boyfriend, but I love my calm mornings.
    I found out I don’t want to go back to school. This sounds a bit dramatic, but after my undergrad experience, I’m fine with not going back. I obviously want to continue my education, so the appeal of school might come back but I think it will definitely depend on the program.

    I used to really really REALLY dislike bell peppers, but now I can’t get enough of them! And lentils, I hated those too. And beans and chickpeas lol. Those are my very favorites now!

    Ever since I was little, I’ve ALWAYS loved pot pie! Actually, I think it was one of the FEW ways my mom could get me to eat a vegetable…even if I was more concerned with getting a hefty serving of biscuit topping! 😉 I was one of the pickiest eaters when I was a kid, so the list of foods that have been reassessed over the years is never-ending!

    PS, I am one of those people who likes color-coordinating her clothes, but I will NEVER like folding them! 😉
