All you need is 5 minutes and a lot of patience while it cooks to whip up this Slow Cooker Beef and Winter Vegetable Stew. It’s packed-full of flavor, with hearty chunks of beef and 3 different nutritious winter vegetables! Perfect for a busy family.
First of all, thank you all for your incredible support after yesterday’s post. I honestly don’t know where I would be without all of you. To everyone who shared, commented, emailed, I love you. But like for real, will you all be my Valentines?
I actually might have an availability for a Valentine’s date since mine ate all my beef stew.
Okay, let me back up here.
The way it works in our home is that whatever I am craving is what we eat for our meals. C can occasionally put in a say (usually he’ll just say “chocolate chip cookies pleaaaase”) but it’s ultimately the maven who decides what we eat. It’s also because I am the one who cooks and IMO if you cook it, you choose it.
C and I have very traditional roles in our relationship. While I am all for GIRL POWER (!!!), I happen to really love cooking and am completely hopeless at any home improvement project, which thankfully is C’s specialty.
I’m not wearing an apron and pulling a roast out of the oven when C gets home, but I make a point of keeping the apartment clean, the laundry done and the cooking complete. C has own fair-share of duties that happen to be more male-typical but it’s a pretty equitable relationship, and it works.
Now the other day my friend Lindsay invited me to an event at the Spoke Club thrown by Lean In Canada. If you’ve never heard of the book “Lean In” on which the Canadian network is based off of, I’ll give you a second to google it. If you have, please proceed.
The event was all about how to turn your passion into a movement. It was relevant and inspiring and I went home thinking HURRAH go me! Women unite!
Meanwhile, C was left home with a slow cooker full of this beef and winter vegetable stew. I had planned to come home afterwards and eat my dinner but left it warm on the slow cooker because I knew he’d be home before me.
Word to the wise: Do not attend a women’s event and then come home hungry only to find your boyfriend ate the entire contents of the slow cooker. Let’s just say I lost my cool and may or may not have pulled the feminist card threatening to never cook a meal for him again. If my job didn’t involve me cooking all day, I might have considered it.
Fortunately for him I ate two peanut butter cup protein bars, a bowl of spinach, a glass of wine and a side of forgiveness so he is presently still my Valentine. But apparently this Slow Cooker Beef and Winter Vegetable Stew is so good C ate 4 portions. #Oy.Print
Slow Cooker Beef and Winter Vegetable Stew
- Total Time: 4 hours 10 minutes
- 1 lb stewing beef*
- 2 cups butternut squash (about 1 lb), peeled and chopped
- 2 cups sweet potato (about 1 large), chopped
- 1 ½ cups chopped carrot (about 1 large)
- 1 med onion, chopped
- 3 garlic cloves, minced
- 2 cups beef broth
- 3 T tomato paste
- 1/2 tsp oregano
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 bay leaf
- Melt coconut oil in a large pan over medium heat and add beef.
- Brown each side (about 5 minutes)
- Place beef and vegetables into slow cooker.
- Top with beef broth, tomato paste and spices.
- Stir so everything is well combined.
- Top with bay leaf and cover to cook on HIGH for 3-4 hours or LOW for 7-8 hours.
- Serve over rice, noodles or on its own.
*I use clodhammer steak (part of the shoulder) but any shoulder or rear-end cut is ideal. I recommend asking your butcher for the best quality stewing beef.
