Now that the weather has finally warmed up I find myself craving smoothies all the time. The weird thing is that I never crave them for breakfast. Lunch? Sure. Dinner? After an especially warm walk home from the subway, definitely. But never for breakfast…It took me a while to figure out why and then I suddenly realized that it was likely due to the fact that I wake up freezing cold! I kid you not, the temperature in my house is 65 degrees all year round. Trust me, I do not enjoy this but I have been vetoed by a certain someone (ahem Mom) so having icicle toes in the summer is a fairly normal occurrence. Needless to say putting an ice cold drink in my body is not exactly what I’m looking for first thing in the morning.
The thing is, with the sun shining outside and the plants in full bloom I don’t seem to find myself craving my standard old hearty oats either. If a big bowl of fruit could keep me full all morning then I would dig in without hesitation, but I know better so I went on a mission to come up with a summery oatmeal recipe.
With strawberry season just beginning I’ve found myself consuming a whole carton in a day or two. Thank goodness for sales (3 for $5.00 score!) otherwise I’d be broke from my strawberry addiction. And so I began brainstorming ideas for a strawberry oatmeal recipe. As I’ve mentioned countless times before I love anything that can be planned ahead and requires very little effort. Overnight oats are my jam! I think you can see where I’m going with this….A Strawberry Oatmeal Breakfast Parfait!
This recipe is as basic as they come with only 2-steps required (if you don’t count chopping the strawberries). I love the creaminess that the yogurt adds, giving it a strawberry shortcake kind of flavour but feel free to substitute it with a non-dairy alternative. My guess is that coconut yogurt and coconut milk would make this recipe even more delicious, and if I’d had any in the house I would have used them. But trust me when I say this breakfast will fill you up and leave you perfectly satisfied as is.

Cook Time: 6 hours to overnight

- 1/3 cup GF certified oats
- 1/4 cup yogurt (plain or strawberry, or use non-dairy alternative)
- 1/2 cup unsweetened almond milk
- 1 cup strawberries
- 1/2 tsp vanilla extract
- 1 tsp chia seeds
- 1-2 tsp sweetener of choice (I used xylitol)
1. Chop strawberries into bits or chunks.
2. Add all ingredients to a mason jar or sealed container.
3. Give it a good shake.
4. Store in fridge for 6 hours or overnight.
