Cut the chicken into bite sized pieces. Using one hand, place the chicken pieces into the egg and then place into the almond meal spice bowl. Use your clean hand to coat the chicken. Place the chicken on a baking pan. Repeat until all of the chicken is coated.
Bake chicken at 400ºF for 20 minutes. Set aside to make sticky orange sauce.
Add the coconut oil to a large pan or wok over medium-high heat. Add the ginger and garlic and sauté for 1-2 minutes or until fragrant and lightly browned. Add in the orange juice, rice vinegar, tamari and sesame oil and bring to a boil.
In a small bowl, combine the tapioca starch and hot water. Mix to form a slurry. Add to the orange sauce and stir until well combined. Reduce heat to a simmer and cook and until sauce has thickened (about 5 minutes).
Add the chicken to the sauce and stir gently to coat.
Serve with rice and veggies for a complete meal. Enjoy!
