Almond Flour Banana Muffins

Skip the grains in these deliciously sweet almond flour banana muffins. Packed full of better-for-you ingredients, these muffins taste just like banana bread but without the guilt!

Ingredients

  • 2 cups finely blanched almond flour (I like Bob’s Red Mill)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • pinch of sea salt
  • 3 very ripe bananas, mashed
  • 1/4 cup maple syrup
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees F.
  2. Line a muffin tin with paper liners or silicone cups.
  3. In a large bowl whisk together almond flour, baking powder, baking soda, cinnamon and sea salt.
  4. Add in the bananas, maple syrup, eggs and vanilla extract. Stir to combine well.
  5. Fold in chocolate chips, if desired.
  6. Divide batter evenly into 12 cups.
  7.  Bake for 20-25 minutes or until tops spring back and they pass the toothpick test.
  8. Let cool for 20 minutes before removing from muffin pan to cool completely.
