Dare I say better than store-bought? Make this build your own muesli recipe right at home and enjoy with milk or yogurt for a delicious and nutritious breakfast that you can customize to your liking!

Ingredients

Scale
  • 1 1/2 cups oats
  • 1/2 cup almonds (or other nuts)
  • 1/2 cup walnuts (or other nuts)
  • 1/3 cup pumpkin seeds (or other seeds)
  • 4 dates, pitted (or roughly a 1/4 cup dried fruit)
  • 1 tsp cinnamon
  • optional: 1/4 cup poppy seeds
  • optional toppings: fresh fruit, coconut flakes, honey, maple syrup etc…

Instructions

  1. Preheat the oven to 325.
  2. Spread out almonds, walnuts and pumpkin seeds on a baking sheet and roast for 10 mins.
  3. While the nuts and seeds toast, chop the dates and toss them with the cinnamon.*
  4. Remove the nut and seed mixture from the oven and let cool. Once the nuts and seeds have cooled, chop the almonds and walnuts.
  5. Mix everything together in a large bowl.
  6. Store in an airtight container or jar.

To prepare muesli: add to a bowl and top with milk of your choice or yogurt, or soak it in milk or water overnight to enjoy the next morning with fresh fruit. Drizzle with honey or maple syrup for sweetness.

*The cinnamon keeps the dates from sticking to everything when it’s a dry mix. Once you soak the muesli mix, the cinnamon will infuse into liquid.
