Looking for an easy 25 minute meal or side dish your whole family will love? This One-Pan Cheesy Rice and Broccoli is a great source of nutrition while also requiring minimal clean-up and dishes.


  • 1 tbsp butter
  • 1 cup carrots, shredded or finely chopped
  • 1 cup broccoli, chopped into small florets
  • 1 cup uncooked white rice
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cups chicken broth or stock
  • 1 1/2 cups shredded cheddar cheese


  1. On your stove top melt butter over medium heat in a large pan with a top or Dutch oven. Add in carrots and broccoli and cook for 2 minutes.
  2. Stir in rice, garlic powder, onion powder, salt and pepper and chicken broth and bring to a boil.
  3. As soon as it’s boiling lower to a simmer and cover for 15 minutes.
  4. Remove top and stir in cheese.
  5. Store in an airtight container in the fridge for up to 5 days. Reheat on stovetop or in microwave.
