No-Bake Chocolate Almond Butter Bars

For the almond base layer:

  • 1 cup natural almond butter
  • 3 tbsp maple syrup
  • 1 cup oat flour (ground rolled oats)
  • 1/4 cup ground flaxseed

For the chocolate layer:

  • 2/3 cup chocolate chips (dairy-free if necessary)
  • 1 tbsp coconut oil
  • Optional: 1 tsp flaky sea salt, for sprinkling

Instructions

  1. Line an 8 x 8 baking dish with parchment paper.
  2. In a large mixing bowl combine all almond layer ingredients and stir until well combined.
  3. Spread almond layer evenly in parchment-lined baking pan and place in the freezer while you make your chocolate layer.
  4. Melt chocolate chips and coconut oil in the microwave in a microwave-safe bowl in 30 second increments.
  5. Remove bars from freezer and spread chocolate layer evenly over top.
  6. Sprinkle with flaky sea salt, if using.
  7. Place in the freezer until set (~30 minutes)
  8. Remove bars from freezer and lift parchment paper to remove bars from the baking pan.
  9. Slice into 12 bars (3 x 4). It helps to use a clean, wet knife for each slice to prevent sticking.
  10. Store in the fridge for up to 2 weeks or longer in freezer.
