Farro Caprese Salad

All you need are 7 simple ingredients to whip up this delicious and flavorful farro caprese salad. A perfect vegetarian grain salad that is filling and satisfying.

Ingredients

  • 1 cup uncooked whole farro*
  • 3 cups water
  • 1 cup cherry tomatoes, halved
  • 6 oz mozzarella balls (ciliegene) or whole mozzarella, chopped into bite-sized pieces
  • 1/2 cup fresh basil
  • 1 1/2 tbsp olive oil
  • 1/2 tbsp balsamic vinegar
  • salt + pepper

Instructions

  1. Bring your 3 cups of water to a boil in a medium pot.
  2. Add your farro and a scoop of salt and lower heat to medium for a rolling simmer.
  3. Let simmer for 25-30 minutes before straining any remaining liquid through a fine mesh strainer.
  4. Allow farro to cool and come to room temperature.
  5. In a large bowl combine farro, cherry tomatoes, mozzarella and fresh basil.
  6. Top with olive oil, balsamic vinegar and salt and pepper. Stir to combine well.
  7. Serve immediately or store in the fridge for up to 5 days.

*If using pearled or semi-pearled farro you’ll cook for 15-20 minutes.
