Ingredients

  • 1 1/2 lbs trimmed green beans
  • 1/2 cup slivered almonds
  • 1/2 cup shaved or grated parmesan cheese
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • juice, 1/2 lemon
  • 1 tsp Dijon mustard
  • 1 garlic clove, finely minced
  • Salt + pepper, to taste

Instructions

  1. Bring a large pot of salted water to boil and add the green beans. Blanch for 2 minutes and then strain. Immediately place green beans in a large bowl filled with ice water to shock them.
  2. In a shallow pan add almonds and toast over medium heat for a couple of minutes. Watch carefully to ensure they don’t burn.
  3. Add your green beans, toasted almond and parmesan cheese to a large plate or bowl and set aside.
  4. In a bowl or mason jar combine olive oil, balsamic, lemon, Dijon mustard and garlic clove and mix well.
  5. Add desired amount of dressing onto your green bean salad and top with salt and pepper, to taste.
  6. Serve cold. See storage instructions above.
