  • 4 tbsp Metamucil Original Coarse Powder
  • 1/2 cup brown rice flour
  • 1/2 cup almond meal
  • 1/4 tsp baking powder
  • pinch of salt
  • 1/2 cup coconut sugar
  • 1/4 cup coconut oil, softened
  • 1/4 cup non-dairy milk
  • 1 tsp vanilla extract
  • 1/3 cup chocolate chips


  1. Preheat oven to 350 degrees F.
  2. Line a baking sheet with parchment or a silicone mat.
  3. In a large bowl combine Metamucil, brown rice flour, almond meal, baking powder and salt. Stir to combine.
  4. Add in coconut sugar following by coconut oil, non-dairy milk and vanilla.
  5. Add in chocolate chips.
  6. Roll dough into 12 balls and flatten slightly on baking sheet.
  7. Bake for 12-14 minutes or until browned around the edges.
  8. Let cool for at least 20 mins on baking sheet before removing.
  9. Store in an airtight container for up to 3 days.
