Tortilla Pizza Cups

Looking for an easy, family-friendly weeknight dinner? These mini tortilla pizza cups are on the table in less than 20 minutes and can be easily customized to whatever toppings you desire!

Ingredients

  • Olive oil spray (or other non-stick spray)
  • 3 x 10 inch tortillas (I use flour but you can use corn or grain-free too)
  • 1/2 cup marinara sauce or other pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • Desired toppings (see suggestions above)

Instructions

  1. Preheat oven to 425 degrees F.
  2. Spray your muffin tin with olive oil or non-stick spray
  3. Use your round cookie cutter to cut out 12 small rounds from your tortillas. You’ll be able to get 4 rounds per tortilla.
  4. Place a small tortilla round into each muffin slot and push to form to slot.
  5. Divide marinara sauce equally into each cup. It will be about 1 tbsp per tortilla.
  6. Add desired toppings.
  7. Top with shredded mozzarella.
  8. Bake in oven for 8-10 minutes or until cheese has melted and cups are golden brown.
  9. Use a knife or spatula to remove your mini tortilla cups and serve.
