No Bean Chili Recipe

This no bean chili recipe is packed full of flavor and protein – with no beans added! The perfect one pot meal to cook up on a cool chilly night that the whole family will love.
1 tbsp olive oil
1 lb ground beef (85% lean)
1 large yellow onion, chopped
3 garlic cloves, minced
2 bell peppers, seeded + chopped
1 jalapeno pepper, seeded and chopped
2 tbsp chili powder
1/2 tsp ground cumin
1/2 tsp paprika
1 x 28 oz can diced tomatoes
1 cup beef broth
1/2 tsp salt
1/4 tsp pepper
Heat olive oil in a large pot over med-high heat. Add ground beef and cook until browned (About 3-4 mins).
Add in onions and cook for 3 more minutes.
Add in garlic, bell peppers and jalapeno and cook for another 2 mins.
Top with chili powder, cumin and paprika and stir to coat beef and veggies.
Pour in diced tomatoes and beef broth and bring to a boil.
Once boiling lower heat to a simmer and cook for 20-30 minutes, uncovered or until desired consistency is reached.
Season with salt and pepper.
Top with desired toppings and serve or store in the fridge for up to 3 days. See instructions above for freezing.
