  • 1 cup all-purpose flour
  • 1/2 cup protein powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon (optional)
  • pinch of salt
  • 1/4 cup greek yogurt
  • 1 cup almond milk
  • 2 large eggs
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • coconut oil or butter for greasing

  1. Turn on your waffle maker to allow it to preheat.
  2. In a large bowl whisk together flour, protein powder, baking powder, baking soda, cinnamon and salt.
  3. In a separate bowl mic together greek yogurt, almond milk, eggs, maple syrup and vanilla.
  4. Slowly add dry ingredients to wet ingredients until well combined. If batter is too thick to stir add in a splash of almond milk 1 tablespoon at a time.*
  5. Grease your waffle maker with coconut oil or butter on both sides and pour roughly 1/2 cup of batter into iron. Cook according to waffle maker instructions. Repeat until all waffle batter is used (don’t forget to grease in between batches).
  6. Serve immediately with maple syrup, nut butter or fresh fruit. See instructions above for storage and freezing.

*Feel free to add in a 1/4 cup of chocolate chips or 1/2 cup of berries if desired.
