Thai Turkey Sliders with Peanut Sauce

Ingredients

For The Sliders:

  • 1 lb lean ground turkey breast
  • 2 T fresh basil, thinly chopped
  • 2 green onions (white and light green only), minced
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon red pepper flakes (optional)
  • 20 large lettuce leaves (I used Boston lettuce)
  • pepper to taste

For the Peanut Sauce:

  • 3 T smooth peanut butter
  • 1 T rice vinegar
  • 1 T gluten-free Tamari
  • 1 clove garlic
  • 1 tsp sesame oil
  • 1/2 tsp freshly grated ginger

Instructions

For the Sliders:

  1. Combine all ingredients (except lettuce) in a large bowl.
  2. Form into small patties (should make about 20).
  3. Head up a large skillet and melt coconut oil over medium-high heat.
  4. Add patties (do not overcrowd) and cook for about 2 minutes on each side.
  5. Wash lettuce and place cooked turkey patties in the center of each.

For the Peanut Sauce:

  1. Combine all ingredients in a large bowl until smooth.
  2. Top each turkey slider with 1 tsp of peanut sauce.
