- In a large bowl combine oat flour, coconut flour, coconut flakes and protein powder.
- In a separate bowl combine softened coconut oil and vanilla extract.
- Add maple syrup and 1/4 cup of non-dairy milk to dry ingredients and stir together. Add in coconut-vanilla mixture.
- Texture should be dry but still able to hold shape. Depending on your protein powder and coconut flour, you may need to add 1-2 T of additional milk (I usually use 2).
- Line an 8 x 8 inch baking dish with plastic wrap or parchment paper.
- Add protein bar dough to dish and spread out using hands. Make sure dough is evenly spread.
- Place in freezer to sit for 20 minutes.
- Remove from freezer and cut into 12 bars.
- Melt chocolate (in microwave or in double boiler on stovetop) and drizzle bars with chocolate.
- Store in an airtight container in the fridge for up to 2 weeks or longer in the freezer.
