Spring Vegetable  Soup

Spring has arrived and with it comes an abundance of seasonal produce! Use those fresh veggies in this Spring Vegetable Soup topped with Garlicky Croutons for a new soup favorite as the seasons turn.

what you need:

vegetables – onion, garlic cloves, asparagus and peas. canned diced tomatoes vegetable stock  olive oil seasonings and spices  sourdough bread and garlic powder

step one

Add olive oil to a large stock pot over medium heat. Add the onion and sauté for 3-5 minutes or until translucent.

step two

Add in the minced garlic and cook for 1 more minute. Add in the asparagus, peas, diced tomatoes, vegetable stock, rosemary, parsley and salt and pepper. Bring mixture to a boil and then lower to a simmer and cook for 40 minutes.

step three

Cut the loaf of sourdough into 1/4-1/2 inch pieces. Add pieces to a large bowl and coat with olive oil and garlic powder. Spread over a baking sheet and bake at 400ºF for 5 minutes. Toss and bake another 5-7 minutes.

Serve this soup fresh topped with homemade garlicky croutons.
