What you need:
– Flax egg – Cornstarch – Cornmeal – Brown rice flour – Baking powder – Unsweetened almond milk – Maple syrup
Combine all dry ingredients (cornstarch, cornmeal, flour, baking powder + salt).
Add in wet ingredients (almond milk, maple syrup + flax egg) and stir to combine. Set aside to thicken for 5 minutes.
Heat up skillet or pancake griddle over medium heat. Add coconut oil and about a 1/4 cup of pancake mixture to the skillet or griddle and cook for 2 mins on each side.
