Creamy Cold Brew Ice Pops

Get your afternoon pick-me-up with these creamy cold brew ice pops! They’re vegan and gluten-free but still packed with flavor and a light caffeine punch. Plus all you need is 3 ingredients for the ultimate coffee treat.


  • 1 1/4 cup cold brew coffee
  • 1 cup full fat coconut milk (or other non-dairy milk)
  • 23 tbsp maple syrup (honey works too)
  • optional: 2 tbsp chocolate chips


  1. Combine all ingredients (except chocolate chips) in a large bowl
  2. Divide mixture among popsicle molds
  3. Drop chocolate chips evenly into molds, if using
  4. Freeze for at least 4 hours or longer
  5. Ice pops will last in freezer for up to 3 months
