Slow Cooker Butter Chicken

This easy slow cooker butter chicken is a set and forget it recipe with options for making in your Instant Pot or stove-top version too! The perfect combination of Indian spices and tangy flavors with a hint of butter to perfection.

  • 1 1/2 lbs boneless skinless chicken breasts, cubed (roughly 1 inch)
  • 1 small yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 inch knob fresh ginger, grated or minced
  • 1 14 oz can coconut milk
  • 1 6 oz can tomato paste
  • 1 1/2 tsp curry powder
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp coconut palm sugar (or brown sugar)
  • 2 tbsp butter
  • 1/2 cup plain Greek yogurt
  • 1 1/2 cups rice of choice (basmati is traditional)

Instructions

  1. Add coconut milk, tomato paste, spices and coconut palm sugar (or brown sugar) to your slow cooker and whisk together until a thick paste is formed.
  2. Add in cubed chicken, onion, garlic and ginger and stir to coat with coconut milk mixture. Top with 2 tbsp of butter.
  3. Cover with top and let cook in slow cooker for 3-4 hours on high or 6-8 hours on low (depends on your slow cooker).
  4. Make rice according to package instructions.
  5. When time is up, remove top and let butter chicken cool for 10-15 minutes before stirring in yogurt.
  6. Serve on top of rice.
