Slow Cooker Butter Chicken

- 1 1/2 lbs boneless skinless chicken breasts, cubed (roughly 1 inch)
- 1 small yellow onion, chopped
- 3 garlic cloves, minced
- 1 inch knob fresh ginger, grated or minced
- 1 14 oz can coconut milk
- 1 6 oz can tomato paste
- 1 1/2 tsp curry powder
- 1 tsp garam masala
- 1/2 tsp turmeric
- 3/4 tsp salt
- 1/4 tsp pepper
- 1 tbsp coconut palm sugar (or brown sugar)
- 2 tbsp butter
- 1/2 cup plain Greek yogurt
- 1 1/2 cups rice of choice (basmati is traditional)
- Add coconut milk, tomato paste, spices and coconut palm sugar (or brown sugar) to your slow cooker and whisk together until a thick paste is formed.
- Add in cubed chicken, onion, garlic and ginger and stir to coat with coconut milk mixture. Top with 2 tbsp of butter.
- Cover with top and let cook in slow cooker for 3-4 hours on high or 6-8 hours on low (depends on your slow cooker).
- Make rice according to package instructions.
- When time is up, remove top and let butter chicken cool for 10-15 minutes before stirring in yogurt.
- Serve on top of rice.
