Orange Pecan Mashed Sweet Potato Casserole


  • 4 medium sweet potatoes (or 3 large)
  • 1 tbsp olive oil
  • 1 cup Tropicana Pure Premium Orange Juice
  • 2 tbsp tahini
  • 1/2 cup pecans
  • salt and pepper, to taste


  1. Preheat oven to 400 degrees F.
  2. Chop potatoes into cubes and coat with olive oil, 1/4 cup orange juice and salt and pepper.
  3. Roast in oven for 30 minutes.
  4. Add potatoes to a food processor and process until smooth.
  5. Add in tahini and 3/4 cup orange juice and continue processing until well combined.
  6. Add to a medium casserole dish and top with pecans.
  7. Bake for 15 minutes or until pecans are toasted.
  8. Serve immediately.
