Spicy Ramen Noodles

  • 8 ounces ramen noodles
  • 1/4 cup soy sauce
  • 2 tbsp sweet chili sauce
  • 1 tbsp rice wine vinegar
  • 1 tbsp maple syrup or brown sugar
  • 1 tbsp sriracha sauce (add more or less based on spice level)
  • 2 tbsp sesame oil
  • 4 green onions, chopped (separate white from green parts)
  • 1 red bell pepper, seeded + thinly sliced
  • 2 garlic cloves, minced
  • 1 inch knob fresh ginger, grated

Instructions

  1. In a large pot on the stove top cook ramen noodles according to package instructions. Drain noodles and run under cold water and set aside while making the rest of the recipe.
  2. In a medium bowl stir together soy sauce, sweet chili sauce, rice wine vinegar, maple syrup (or brown sugar) and sriracha sauce. Set aside.
  3. Heat sesame oil in a large pan or wok over medium-high heat. Add white parts of green onion and cook for 1-2 minutes or until browned.
  4. Add bell pepper and cook for 3 minutes or until lightly browned.
  5. Add in garlic cloves and ginger and cook for 1 more minute.
  6. Stir in ramen noodles and top with chili sauce mixture. Let noodles simmer in mixture for a few minutes to allow flavors to meld.
  7. Top with green parts of green onions for garnish and serve.
