The Best Spicy Ramen Noodles!

I love ramen. It’s probably one of my favorite foods to eat out. Generally I like to leave the ramen noodle soup recipes to the professionals but occasionally I want the taste at home.

Enter these spicy ramen noodles! Rather than being in soup form these spicy noodles feature just the noodles and veggies in a spicy chili sauce. The whole meal comes together in 20 minutes with fairly straightforward ingredients that you can find at most grocery stores.

So if you’re craving the flavors of ramen but don’t want to go out, try these spicy ramen noodles instead. I guarantee you’ll love them!

Ingredients in Spicy Ramen Noodles

  • Ramen Noodles – traditional wheat flour noodles. You can sometimes find them boxed or as instant ramen noodles. You can disregard the seasoning packet if it’s from an instant version.
  • Soy Sauce – Feel free to use gluten-free soy sauce or tamari if gluten is an issue.
  • Sweet chili sauce – you can find this at most grocery stores or Asian grocery stores.
  • Rice wine vinegar – a little acidity to build out the sauce flavor.
  • Maple Syrup – for sweetness. You can also use brown sugar or honey (if not vegan).
  • Sriracha sauce – I recommend 1 tablespoon sriracha, however if you like things more or less spicy you can increase or decrease the amount.
  • Sesame Oil – for cooking your veggies + aromatics
  • Green onions – also called scallions. You’ll separate the green parts (for garnish) from the white parts (for cooking)
  • Garlic cloves + Fresh ginger – grated or minced.
  • Red Bell Pepper – or other bell peppers. See note below about adding different vegetables

How to Make Spicy Ramen Noodles

STEP 1: COOK RAMEN NOODLES

In a large pot on the stove top cook ramen noodles according to package instructions. Drain and run under cold water and set aside while making the rest of the recipe.

STEP 2: MAKE SAUCE

In a medium bowl stir together soy sauce, sweet chili sauce, rice wine vinegar, maple syrup (or brown sugar) and sriracha sauce. Set aside.

STEP 3: COOK VEGGIES

Heat sesame oil in a large pan or wok over medium-high heat. Add white parts of green onion and cook for 1-2 minutes or until browned. Add bell pepper and cook for 3 minutes or until lightly browned. Add in garlic cloves and ginger and cook for 1 more minute.

STEP 4: SIMMER NOODLES IN SAUCE

Stir in ramen noodles and top with chili sauce mixture. Let noodles simmer in mixture for a few minutes to allow flavors to meld. Top dish with green parts of green onions for garnish and serve.

Easy Swaps + Substitutions

Add protein – you can add any type of protein you desire. Shrimp, chicken (cubed or ground), beef or even tofu are all great additions or just enjoy with egg!

Make it gluten-free – use gluten-free ramen noodles and either tamari or gluten-free soy sauce for a fully gluten-free meal.

Add different veggies– If you’d like to add more vegetables or different veggies you can absolutely do that! Suggestions include mushrooms, carrots, broccoli, asparagus and snap peas.

Storage Instructions

Store spicy ramen noodles in an airtight container in the fridge for up to 3 days. Reheat on stove top or in microwave.

  • 1 red bell pepper, seeded + thinly sliced
  • 2 garlic cloves, minced
  • 1 inch knob fresh ginger, grated

  1. We loved these. So easy to make and delicious with a little spicy kick. I added leftover cubed chicken who sauté with the peppers. Will definitely make again.
