It only makes sense that I spend today’s post discussing mommy dearest. Unfortunately she likely won’t be able to read this as she is currently frolicking the globe and last I heard THM was in Russian…True story!

It’s probably a good thing I made this recipe while she’s away since the Maven Mama hates coffee. Clearly I didn’t inherit that gene. Her planning and organization genes seemed to have skipped my generation too. Sorry ma!

This is a lady who plans her vacations two years in advance, will find you the best deal on just about anything, and shuttled around 4 kids all while whipping up delicious meals. She’s basically the closest thing to superhuman that earth has ever seen.

Though I may have given her a hard time, well, all the time, she really is amazing and I’m grateful to have someone who I can turn to to help me navigate any situation, inspire me in the kitchen and remind me I have a dentist appointment. She is truly one-of-a-kind!

Even though we should tell our moms everyday how awesome they are, Mother’s day is the perfect opportunity to show them how much we care. So myself and my fellow food obsessed bloggers have brought you delicious and healthy brunch recipes that you can quickly whip up for Mom. There’s no better way to say “I love you” than through food amIright?

I brought my Paleo a-game to the table with these Mocha Almond Pancakes. It only took me three tries but they were SO worth it.

Ingredients

Scale
  • 1 cup almond meal
  • 3 tbsp coconut flour
  • 2 tbsp cocoa powder
  • 1 tsp freshly ground coffee
  • 2 tsp baking powder
  • 1/4 tsp sea salt
  • 1 cup strongly brewed coffee (cooled to room temperature)
  • 2 eggs
  • 1 tbsp maple syrup
  • 1 tsp almond extract (or vanilla extract if you can’t find)

Instructions

  1. In a large bowl combine almond meal, coconut flour, cocoa powder, ground coffee, baking powder and sea salt.
  2. In a separate bowl combine coffee, eggs, maple syrup and almond extract.
  3. Add wet ingredients to dry and stir until just combined. Let sit for 5 minutes.
  4. Heat a large pan or pancake griddle to medium heat and melt coconut oil (about 1 tsp).
  5. Add 1/4 cup of batter per pancake and let cook for 3 minutes or until all bubbles have popped and rim looks cooked. Do not overcrowd or make too big or they will be difficult to flip.
  6. Flip and cook for 1-2 more minutes.
  7. Repeat process until all pancake batter has been used.
  8. Serve with maple syrup or toppings of choice.

  1. Freaking GENIUS. You know I’ll take any excuse to pack more chocolate into my mornings, and I’m loving the fact that you used almond meal and coconut flour for these… I’ve been meaning to do more experimenting with those myself, but ugh… so finicky. Thank you for saving me the trouble 😀

    One of my favourite memories with my mom was flying out to Montreal for a weekend when I was in grade 12 to go grad dress shopping together. Runner up: when we were in Mexico when I was 15 and my mom got me a brown cow at the bar and said “Here you go – you first real alcohol drink!” And I was just like “Uhh actually…” Haha!

    I think my mom is the best too! One of my favorite memories is only being allowed to do half day camps in the summer because my mom wanted to pick us up and eat lunch with us and take us the beach. How cool is that!?

    No mother’s day plans this year but hopefully next year! 🙂

  8. Awesome lineup Davida – being a coffee and chocolate addict, I am partial to your mocha pancakes – love how fluffy they look – bet the coconut adds a nice touch to the coffee/cocoa!

I love it when I find out about other people that hate coffee…makes me feel less alone in my coffee hatred 😉 But I still might like these pancakes – while I hate coffee in general, give me coffee-flavoured desserts or ice cream and I’m a happy girl. Does it make sense? Not really…but I roll with it.

  10. Since I am selfish, I now think of Mother’s Day as my holiday, as in another birthday of some sort and then realize I better find my mother a card or a gift lol. At least I am honest. Ok now really, Sunday my son and I go out for our traditional early breakfast and then spend time with my parents…BTW, did I ever tell you I am allergic to almonds? Makes me sad sometimes with so many yummy looking almond meal involved recipes.
