Lately, when people ask me where I live I have to laugh when I declare “Toronto”. At this point, my apartment in Toronto feels more like an airbnb I cycle through every once and a while than a home-base. Seeing as I was home for 6 days in May you can easily see why this might be the case.
FYI June is looking to be about the same. I should probably just keep my bags packed at all times.
Needless-to-say, having quick and easy travel snacks to satiate that hangry monster has become ever more important. Trail mix to the rescue!
The story of this Chocolate-Covered Strawberry Trail Mix pretty much sums up my life perfectly right now. I bought the freeze-dried strawberries at Whole Foods in Minneapolis. Put it together in Toronto. Brought a bag to New Orleans, and finished it off in San Francisco.
Talk about travel mania! At least I’m still sticking to one of my top rules when it comes to eating healthy while travelling.
But for as insane as my life may be right now, I’m loving every second of it. I get to explore the world, see people I love, and challenge myself to maintain a healthy lifestyle when so many factors are out of my control. It’s really helping me work at ensuring I’m not just eating healthy, but also have a healthy mindset!
But even if your current travels consist of walking from your home to your car, I still think you’ll love this trail mix. It may even have the power to transport you to magical places…
Serves: 4-5 cups
- Mix all ingredients in a large bowl.
- Store in a glass jar or ziploc bag for easy transport.
- Will keep for up to one month.
