Cauliflower Tabbouleh

Let’s start today off with a quick vocabulary lesson.

Ma·ven n.: a trusted expert in a particular field, who seeks to pass knowledge on to others. The word maven comes from Hebrew, via Yiddish, and means one who understands, based on an accumulation of knowledge.

Also known as…a know-it-all. But here’s where the lesson gets interesting. The other day I was talking to my Dad about my blog name. He mentioned how he thought it was accurate, because I can be a total know-it-all (in the worst way), and also for the whole Jewish aspect. I was honestly stumped when he brought up the Jewish part. Moral of the story is that I am a supposed know-it-all who didn’t know the roots of her own blog name. Fail.

Cauliflower Tabbouleh // thehealthymaven.comWhile we’re on the topic of Jews I thought I’d share a recipe with you from my people. Well actually I’d planned to share a recipe from my people until this maven discovered that tabbouleh is in fact a Lebanese dish. Fail #2.

So let’s try this again. Today I am sharing a Lebanese dish that has nothing to do with my peeps, but I tried it for the first time in Israel and unknowingly went about spreading the word that it was Jewish food. I’m starting to think I may need to change my blog name.

Forgive me. Thank you Dad for educating me on my own blog name and for suggesting I add cumin to the recipe. Maybe you should start a blog too. The Maven Dad? I’ll get working on it…

Cauliflower Tabbouleh

Serves 6-8     adjust servings

Ingredients

  • 1 large head of cauliflower, chopped into florets
  • 1 bunch green onions, white and green parts (about 1 cup)
  • 1 cup chopped mint
  • 1 cup chopped parsley
  • 1 cucumber, diced
  • 2 cups cherry tomatoes, cut in half
  • 1 T lemon juice
  • 1 T olive oil
  • 1.5 tsp salt
  • 1/2 tsp ground cumin
  • pepper, to taste

Instructions

  1. Place florets in food processor and pulse several times until "couscous" consistency is reached.
  2. Place "riced" cauliflower into a large bowl.
  3. Add chopped onion, parsley, mint, cucumber and tomato.
  4. Coat with olive oil and lemon juice and sprinkle with cumin, salt and pepper.
  5. Place in an airtight container or cover bowl with saran wrap and allow tabbouleh to sit overnight (or at least 6 hours).
  6. Serve cold.

    I definitely had no idea “maven” stems from a Jewish word either, so you’re not alone! And I feel like tabbouleh is generally a middle eastern thing, so it must have some roots in Israel!

    I may or may not also be a huge know-it-all. Somewhere in my childhood I developed the habit of stating my opinions as if they are facts, even if I’m completely guessing. I’m not sure if it’s tone or attitude or a combination but it became a problem. I didn’t notice until college when I would make crazy speculations in response to my friend’s questions and get the reaction “oh wow I never knew that!” Uhm, I just made that up… sorry. So I taught myself to always lead with a qualifier when I don’t actually know (or think I know).

    I had no idea about where maven came from. This tabbouleh sounds good! I picked up some quinoa tabbouleh at costco yesterday and was reminded how good the flavor combination is. I might have to make this at home cauliflower version next!

    I remembered I had a vegan tabbouleh in Istanbul and I had massive hives growing on all over my body within a few hours. I don’t know whether it’s food allergy or just foreign ingredients, but I have had tabboulehs in the UK and elsewhere. I’ve seen a recipe using cauliflower for “cream” sauce for desserts…and it’s always exciting to see ingredient cauliflower in a variety of dishes.

    Second – I’m a complete idiot because I read over the ingredients at least 5x looking for the tabbouleh. (I thought it was some type of grain.)

    I had NO idea that the base of tabbouleh is cauliflower?!?!? I always assumed it was some kind of super tiny pasta or rice or something…I guess you do know it all!

      oh sammy! Tabbouleh is a type of salad and the usual grain is bulger wheat but I used ground up cauliflower instead 😉

    I never knew Maven was from Yiddish! And it’s ok to be a know-it-all as long as you teach others instead of making them feel dumb 🙂 I keep seeing cauliflower recipes where it’s “riced” like this and I really need to try it! I love tabbouleh so I’m sure I’d love this.

    I am Jewish, born in Lebanon, I grew up eating Tabuleh, it may not be considered an Ashkenazi Jewish food, but it could be considered a Sephardic food which has a lot of Middle Eastern influences… Maybe there is no fail#2

    Love the story! Totally sounds like something I would do…when I made my German Chocolate {Sex} Cake, I was so impressed that it came out well using almond milk (remember I am NOT a baker) that I went on and on and ON about how I’m a genius and made this totally dairy-free cake from scratch…yeah, I totally forgot about the stick of BUTTER that was in it! 😯 Lol

    Um, traditional foods I grew up with? You mean besides the SPAM, fish sticks, and French fries? Yeah, I do NOT come from a healthy background! But when my mom DID cook, she would make some of the best southern comfort food dishes…her chicken pot pie being one of my favorites!

I honestly always just thought of a beautiful, mysterious raven when I read “maven.” Now, I didn’t actually think you meant raven, it’s just a word association that will never go away.     love tabbouleh but the grains they use always restricts how much I can eat it! What a great gluten-free swap this is.
    Origins aside, the israeli way of eating falafels with all the salads/toppings is my most favorite combination – yesterday I got myself a falafel salad at this israeli chain in NYC called Maoz – the tabbouleh there was different from the lebanese one I’ve had – but yummy nonetheless..
