Coconut Lemon Poppy Seed Loaf {Gluten-Free}

This Coconut Lemon Poppy Seed Loaf is gluten-free and healthy and makes a delicious springtime snack or nutritious breakfast! 

My intention for this week was to only share Kosher for Passover recipes. Not that I keep Kosher or eat Kosher for Passover food, but for those who do, it’s nice to have food options besides matzah with peanut butter (which apparently is actually a no-go because PB is a legume!) or those horrendous passover Cheerios that taste like air. But I have failed you.

As unbelievably delicious as this Coconut Lemon Poppy Seed Loaf may be, it is NOT kosher for passover. Don’t get me wrong I am stoked to be sharing this recipe with you, but it was also the only recipe I had prepared and photographed. Lately I have been living off strange quinoa bowls and smoothies. Weirdly, when C goes out of town I lose all motivation to make meals that require more than turning a blender on.

Before you check me into rehab, we’re not talking alcohol. I had every intention of making it to the grocery store today but I literally cannot move from my bed. Why? Because I think I ODed on my allergy meds. True story.

I have prescription allergy meds because I have the strangest allergy in the world, I am allergic to heat. Yes this is a real thing. I literally want to scratch my skin off if the temperature is too hot. Ironically I cannot stand the cold and crank the heat up as often as I can. Usually it’s when the temperatures go bonkers in the summer that it gets bad. Clearly, that is not the situation I am dealing with now.

I also think it could be strawberries, but that just may be the hypochondriasis talking. The wise thing to do would have been to take an oatmeal bath (get clean and eat your breakfast too!) and take my meds before going to sleep. Instead I made the wise choice to DOUBLE my meds to knock me out so I didn’t have to deal with this horrific feeling of wanting to crawl out of my skin. And now here I am 24 hours later, somewhat delirious with a single slice of this loaf left. Someone please come feeeeed me. Mom? Are you reading this?

And this my friends is the long story about why you’re not getting Passover recipes.

Coconut Lemon Poppy Seed Loaf {Gluten-Free}

PREP TIME 10 mins
Cook Time 45 mins
Total Time 55 mins

Ingredients

  • 2 cups Gluten-Free All-Purpose Flour (I used Namaste Perfect Flour Blend)*
  • 1/2 cup unsweetened coconut (plus more for sprinkling on top)
  • 1/4 cup coconut palm sugar**
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 1/2 T poppy seeds
  • 1/2 tsp salt
  • Zest from 2 lemons
  • Juice 1 lemon
  • 1 cup unsweetened coconut milk (I use refrigerated kind, not canned)***
  • 1/4 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract
  • 2 eggs

Instructions

  1. Preheat oven to 375 degrees F.
  2. Grease an 8 x 4 inch loaf pan with coconut oil.
  3. Mix together gluten-free flour, unsweetened coconut, coconut palm sugar, baking soda, baking powder, poppy seeds, salt and lemon zest.
  4. In a separate bowl combine lemon juice, coconut milk, melted coconut oil, maple syrup, vanilla extract, and eggs.
  5. Add wet ingredients to dry and stir to combine. Do not over-stir. Sprinkle coconut on top if desired.
  6. Pour batter into loaf pan and bake for 45 mins on middle rack.
  7. Remove from oven and let sit in pan for 20 mins before removing and placing on a wire rack to cool completely.
  8. Will keep for 5 days (possibly longer, it just didn't last that long here!).

Replace with equal parts whole wheat flour if not gluten-free
*Replace with equal parts brown sugar
***Replace with any kind of non-dairy or dairy milk (just won't yield as much of a coconut flavour)

    Anyone who reads this- I can confirm her strange quinoa bowls. ‘pizza quinoa with a fried egg on top.’ Yep, strange.

    Hope the welts have decreased- I love lemon and poppyseed muffins so clearly I’d approve it in loaf foam. That, and I have coconut sugarrrrrrr.

    OMG I WANT TO MAKE THIS RIGHT NOW!!!
    I have reactions to the sun like you describe to the heat. It sucks!!! And…yes…people can be allergic to strawberries……that seems to be one of those allergies that develops as a kid though.
    I have crazy reactions to oats (even gf ones).
    Ok. I’ll stop. My advice? Just don’t Google it 🙂

    So I have been trying to eat less gluten lately because of some health issues, and my mom calls the other days saying she bought the kind of bread the nutritionist said I could eat and she was going to bring it over, She talked about how delicious it was.. A few minutes later she came in with zucchini bread.. I was like ‘mom, EZEKIEL’ bread. Just because it sounds like it has veggies in it, does not make it gluten- free.’ So I had to sit and watch Joseph and Charlie scarf it down.. Long story short, I’m not sharing with them when I make this.. 🙂

    oh man the nurse in me gasped when you said you doubled your allergy med! NAUGHTY!! Take a benadril next time, if you can 🙂 Allergic to heat….. that is a new one…. I’ve never heard that. It must suck though!

    Considering that I had absolutely no idea that someone could be allergic to heat…why couldn’t someone be allergic to strawberries? As soon as you said the heat thing I started thinking about that crazy heat wave we got last June…I hope your apartment has air conditioning!

    I have the same problems with heat! Except I get tired, grumpy, and break out in weird rashes… which made being in Hawaii all sorts of awkward. I guess that’s why I live in cold, dry Canada… And you can be allergic to strawberries because I’m allergic to pineapple. And the weird thing is that it just happened one day out of the blue. I ate pineapple all my life with no problem, and then somewhere around 22… BAM. No more.

    I have oral allergy syndrome (OAS) which is a reaction to certain fruits and nuts related to my pollen allergies. I am allergic to birch pollen fruits – apples, pears, peaches, plums, sometimes grapes as well as raw walnuts and almonds, sometimes carrots and sometimes celery…Yes, I live on apples. I take zyrtec year round which minimizes the symptoms and certain apples are worse for me than others. I have a few other fruit allergies but I deal with the symptoms….As for the nuts thing, I just avoid raw. If they are cooked (and this goes for the fruits too) the allergy part doesn’t apply. Has to do with the pollen.

    I’m the same way when I’m by myself. I’ll often have dinners that consist of spoonfuls of PB, a cracker, wine, and random pieces of deli meat or cheese.
    This bread looks fantastic! I love lemon and poppyseed, so I’m sure this is crazy delicious.

    I have a friend who is allergic to tomatoes and bananas. So I bet you can be allergic to strawberries, but I clearly don’t wish so.

    Wait what? I’m allergic to heat too! I used to have severe eczema, and heat would make me want to crawl out of my skin and then just step all over it. Terrifying visual, but it’s true. It’s not as bad now, but I just found myself starting to scratch my arms again last night…spring is here! Also, I used to wash my face with oatmeal before I realized how much more awesome it is to eat the stuff.
    This coconut lemon poppy loaf will make everything better though. And I hope you feel 100% yourself again soon, girl!

    Lemon is my favorite fruit inspired dessert flavor so this recipe sounds fantastic. I am allergic to raw onions. The weird part about it is that it doesn’t only cause me digestive issues…i get a sore throat, headache and super sleepy. It’s like they give me a 6 hour cold/flu. 🙁

    Hahahah you little minx taking all those meds!!! 🙂 Even though it’s not fancy, quinoa random bowls are the best because qunioa can literally be made into anything. It’s the best. And this recipe reminds me of my favorite poppyseed muffins I used to eat as a kid. They were from Costco and gigantic and delicious. 🙂

    Now THIS is an epic recipe to come back to your blog to…YUM! So I know it’s probably filled with all kinds of nasties but I have a weakness for the Lemon & Poppyseed Muffins at Starbucks..at least if they are as delicious as I remember them being! I’m definitely digging your version so much more- I love that you’ve given recipe substitutions. My mom is actually hosting a high tea next week for her friends so I might have to give this recipe a whirl asap! Do you think chia seeds would work as a poppyseed alternative?

    I’m so sorry to hear about your allergy–that sounds so uncomfortable. I used to have really, really bad reactions to the sun when I was little to the point where I’d break out in hives. I’m sorry you have to deal with this! This coconut lemon poppy seed loaf looks so unbelievably good though!     Oh my gosh! I’m so sorry you are having an allergy episode! I have never heard of an allergy to heat!

    I have really bad seasonal allergies and my medication makes me so loopy and tired. It’s the worst! Feel better soon.

    I feel ya on losing motivation to cook actual meals when your significant other isn’t home. I live a double life where I run a food blog and am simultaneously incredibly lazy with actual meals for myself haha. Microwavable dinners are not uncommon around my place.

    Secondly, YUM YUM YUM to this! Love how moist and tropical it looks and I;m just a huge fan of poppy seed baked goods in general. They add great flavor and I need little crunch :).

    HA! if I didn’t go about my life looking at everyone elses delicious eats I’m pretty sure I’d subsist on granola alone… and I think I’d be okay with that.

    I remember one time I accidentally took a double dose of my migraine medication (pharmacy didn’t mention they’d changed the packaging) I was basically high for 2 days… Hope your itchiness is heading away and you haven’t removed your skin yet.

      It might work with their flax eggs or chia eggs though I can’t say for sure as I haven’t tried. Let me know if you have any luck!

    If this is what happens when you OD on allergy meds, maybe you should do it more often. Just sayin’. You know I love lemon anything so this is right up my alley. I’d probably stick blueberries in there too because I’m obsessed with the flavor combo of lemon blueberry.

    I’m allergic to alcohol. No joke and yes I still drink. I just turn bright red and get all hivey on my face. Good times!

    Ahhh, storytime with Dav…my favorite time of day! Girl, you’re KILLING me with this one…and with these pics! I don’t even like lemon flavored desserts, but you almost have me convinced to try to lick my screen with that last shot! Hope you’re feeling better (surely, after a week you are…forgive my bad blog reading habits)! Oh and just FYI, strawberry allergies are most definitely real. I’m lucky that I’m still able to EAT them, but only if I chop them up really well because if they touch my lips, I break out in a rash! It’s called contact dermatitis…and it’s not pretty! 🙁

    I am allergic to my own hormones. every month I get a severe skin flare up die to being allergic to my own progesterone! great eh? 🙂

        oh man! That may out-do being allergic to heat! I also have the worst seasonal allergies. The weather is killing me right now!!
