The Best Grain-Free Chocolate Chip Cookies

The Best Ever Grain-Free Chocolate Chip Cookies made with almond meal and coconut flour. You won’t miss the grains in this paleo and healthy dessert recipe.

It’s hard dating a food blogger. People think C gets it so easy because he’s surrounded by delicious food pretty consistently, but we both know the truth. Yes, he is well fed and I take full-respsonsibility for this, but people don’t know what really goes down behind the scenes.

You won't miss the grains in this paleo and healthy dessert recipe.Now I’m not about to throw myself under the bus and C is far too considerate to do this either, but I will let you in on a bit of what goes down in the Maven household. Let’s rewind to this past Sunday.

10:00 AM-I bounce out of bed declaring I will be attempting round 3 of my cinnamon roll adventure. After a night out of drinking (happy bday Sam!) C was not entirely pleased by my peppiness.

10:05 AM-owwwww my head hurts. Proceed to complain about it for the next minute while insisting I will never drink again (by again I mean not until tomorrow). C nods in agreement.

10:20 AM-the entire kitchen looks like it was hit by a flour hurricane. C looks on in horror knowing he will be the one cleaning it (I don’t clean).

12:00 PM- Kick C out of the house so I can photograph in peace…I have to shoot alone (don’t ask). C surprisingly agrees.

5:30 PM- Declare I am in a bad mood because of a bit of a fiasco over miso paste in the grocery store. C googles miso paste.

7:30 PM- Dinner is ready! But not before I spend 5 mins photographing my meal. C looks like he might eat my face off, bath salts stylez.

7:35 PM- Remind C that I splurged on fresh salmon for the 5th time in 5 mins and that he better like it. C tells me it’s delicious for the 5th time.

9:00 PM- Announce that I want to bake cookies. C is super excited.

9:01 PM- Discover I have no more flour so flourless it is! Spill almond meal all over the counter and scream “NOOOOOOO”. C has a look of terror on his face.

9:30 PM- Cookies come out of the oven and they are unreal! Inform C he can only eat one now since I’ve now decided I am going to post them and have to save them for a photo-shoot tomorrow…C looks like he might cry.

It ain’t easy dating me! Luckily I found myself a gem who puts up with my dramatic, crazy self.

Come home C! I have a full batch of THE BEST grain-free chocolate chip cookies waiting for ya 🙂


The Best Grain-Free Chocolate Chip Cookies

  • Prep Time: 10 minutes
  • Cook Time: 12 minutes
  • Total Time: 25 minutes
  • Yield: 20 cookies 1x


  • 2 1/2 cups almond meal
  • 2 T coconut flour
  • 2 T ground flaxseed
  • 1/2 cup coconut palm sugar*
  • 1/2 tsp salt
  • 1/2 tsp + 1/4 tsp baking soda (divided)
  • 1 egg
  • 1/4 cup coconut oil, softened**
  • 1/4 cup unsweetened applesauce-warmed (2030 seconds in microwave or on stove top)
  • 1 tsp vanilla extract
  • ½ cup chocolate chips***


  1. Preheat oven to 375 degrees F.
  2. Combine almond meal, coconut flour, flaxseed, coconut palm sugar, salt and 1/2 tsp of baking soda.
  3. In a separate bowl combine warmed applesauce with a 1/4 tsp of baking soda. Make sure it fizzles. If it doesn’t, start over with fresh applesauce and warm up for longer.
  4. Combine applesauce mixture with coconut oil, egg, and vanilla.
  5. Add to dry ingredients and stir until combined.
  6. Add in chocolate chips.
  7. Line a baking sheet with parchment paper or a silicone mat.
  8. Roll cookies into balls and then flatten slightly on tray.
  9. Bake for 12 minutes (or longer for crispier) then remove and let sit on tray for 5 more mins.
  10. Remove from tray and let cool completely on a wire rack.
  11. Store in an airtight container for up to 1 week.


*or brown sugar.
**or use softened butter.
***or I use enjoy life dairy-free chocolate chips.

    Legit making this because I tried something quite similar with the breakfast cookie dough…but now have an excuse to bake them. AND i still have the damn coconut sugar. But q….1/2 tsp or 1/2 cup. oh snap.

    I have a pretty healthy dramatic streak myself. I’ll occasionally throw in a different accent too just to keep Riley on his toes. In the kitchen, though, I’ll cook one really good meal a week and that’s about it. The rest of the time I’ll flap my hands helplessly until Riley takes over and I can go drink wine.

    Hhahaha C must be a real guy to put up with you. Kidding. Not kidding. Yeah I’m usually home alone when doing kitchen experimentations–oddly enough–but when Miguel is home I always make him be the taste tester. Always. If he doesn’t like it then it’s not on the blog. Oh and the other week when I kept messing up those chickpea cookies.. now THAT was kitchen frustration.

    Ha! YES. This is totally my life also. If I can spill something, I do (it’s inevitable) and the.boy very often has to wait many hours to eat cookies because I need good lighting. These look so worth the wait, though!

    a dramatic food pic obesser/kitchen messy/whiny bee when I have a kitchen fail/whiny bee when the pics don’t turn out the way I want them to be/Photograph 10 minutes before we could eat…???!!!
    Kidding. He broke up with me cause he always had to run to expensive whole foods stores and pick up stuff he never heard of.
    KIDDING! (but hey, we need to keep up with the jokes in life, right?? :-))

    Ha ha! I used to be crazy and dramatic (well, I still an inside)…but I keep it contained because my partner tends to be more dramatic than me (honestly, never thought I’d see the day). So my sanity is pretty much forced =P

It’s good to know I’m not the only drama queen in blogland, although my drama has nothing to do with food blogging and everything to do with over-reacting being my default reaction.     Oh my goodness, this is the story of my life. lol. Isaac knows to ask before he eats anything I make because usually I want to save most of it for a photo shoot. Another issue = working from home and baking/cooking all the time. I feel like I’m always eating — gotta test the recipes, right?

    Bahaha I laughed so hard at this, NO SHAME! I am very similar..esp when it comes to photos. I feel so weird when people are around to watch, not because I’m embarrassed or ashamed, but I just don’t like an audience! I also often bake things and have to tell those around me ONLY ONE I NEED these for photos tomorrow, because obviously they cannot be photographed in unnatural ugly light!! DURR. These look SO good. Your boo bear sounds like an angel.

    HAHAHAHAHAHAHA you’re too funny girlie! That sounds like me and my mum tbh, especially the part where she can’t eat the cookies because I have to shoot them or the part where she has to clean the almond flour (it is usually sticky honey instead) all over the counter hahahahaha.

    The best chocolate chip cookie ever, really?!? I posted a healthy version today – made with maple syrup, oats & applesauce. They were pretty incredible! I will have to try yours to compare! Lol…what are the chances of us posting the same thing on the same day?

    I wish I had 5 of these cookies right now for my afternoon snack! They look delicious. I got a serious kick out of the post…my husband never complains but did mention once that he never eats a hot meal…you know because by the time I’m done photographing it the food is cold. I felt so bad. Now I don’t post as many hot dishes and when I do I try to make multiple servings so that he’s busy taste testing in the background while I’m taking pictures. I don’t mind him being with me while I photograph but I’m usually so focused that it’s not worth having a conversation with me. Hehe.

    Haha this is hilarious! My parents have to put up with a lot from me too… I’m constantly leaving my photography area set up on our dining room table, and it drives my mom nuts! And JZ always has to put up with the 5 minute wait while I take photos of our meals at restaurants. Overall I think they can’t complain though… I mean hello we make them food. 😛

    Haha I got a kick out of the bath salts joke. I’m simultaneously amused and horrified by bath salts zombies but a well-placed joke like basically makes you my favorite person.     So funny I found this post of yours today of all days: I made some lemony grilled salmon with grilled tomatoes and mushrooms for lunch, and it smelled and looked delish. Sadly for Boyfriend I still needed to take photos of it, so he had to endure about 20 minutes of staring at the full tantalizing plate waiting for the time when I would allow him to eat. He muttered something about other men not living with a food blogger girlfriend not having to endure this kind of torture 😉 But then once I was done and could eat he hummed with his eyes closed so it was worth the wait (I hope so 😉 )
