Butternut Squash and Sweet Potato Soup

October 10, 2014

A sweet and zesty soup with the flavours of fall from butternut squash and sweet potato. This soup will keep you warm through the Fall and Winter months.

As delicious as this Butternut Squash Sweet Potato Soup is, the writing of this post was a complete afterthought. I was desperate to share it with you but was unfortunately preoccupied with trying to keep up with social media (new reality show?).

Butternut Squash and Sweet Potato Soup - a sweet and zesty soup to keep you warm through the Fall and Winter months! As you saw in my Day In the Life of the Maven post, blogging full-time requires being on social media A LOT. From Facebook to Pinterest to Instagram and everything in between, my life is so consumed by social media that I oftentimes find myself craving a social media detox.

Actually, a few weeks ago I took a SM detox only to return and discover that a new social network had been created! WTF. Because just what we all need is a another way to communicate…

Butternut Squash Sweet Potato Soup - a sweet and zesty soup to keep you warm through the Fall and Winter months!I initially heard about Ello from my cousin who explained that it’s a new social media platform with similarities to Facebook but without all of the ads and creepiness you find yourself scrolling through on the book. I was skeptical at first but within a day it had been mentioned by at least 3 other people so I jumped on the bandwagon.

It’s currently still in the Beta stage so it’s invite only but somehow I scored an invite. The verdict? I’m kind of into it. Although the last thing I need is another SM platform, I actually really like the simplicity of Ello. Or maybe it’s just an opportunity to have a clean slate and not have to unsubscribe from 30% of the people you follow (just me?)? It could also be that I currently only follow food bloggers so I don’t have to worry about being infiltrated with pictures of people’s cat’s and TMI statuses.

Butternut Squash Sweet Potato Soup - a sweet and zesty soup to keep you warm through the Fall and Winter months!Either way I think I am maxed out on social media. That is until the next greatest platform is released…

Butternut Squash Sweet Potato Soup

  • Prep Time: 10 minutes
  • Cook Time: 35 minutes
  • Total Time: 45 minutes

  • 1 T olive oil
  • 1 large yellow onion, diced
  • 4 cups peeled & chopped butternut squash (about half a medium BNS)
  • 3 cups peeled & chopped sweet potato (about 2 medium)
  • 6 cups vegetable stock
  • 1 tsp sea salt
  • 1/2 tsp ground pepper
  • 1/2 tsp paprika
  • 1/4 tsp cinnamon

  1. Heat up olive oil in a large pot over medium-high heat.
  2. Add in onion and sauté for 2-3 minutes or until onions are translucent.
  3. Add in butternut squash and sweet potato and cook for another 2 minutes.
  4. Top with vegetable stock and spices and bring to a boil.
  5. Lower heat to a simmer, cover and cook for 20 minutes.
  6. Remove from heat and allow soup to cool slightly.
  7. Using an immersion blender blend soup until smooth. OR blend in a regular blender in small batches.
  8. Serve warm.
  9. Will keep up to one week in fridge and also freezes well!

I love the simplicity of this soup girl! Something that could be easily whipped up on a weeknight 🙂

I hear you on social media overload. That’s me everyday!

I finally got IG and yep, I’m officially on my phone all the time. It is ridiculous …
This is also ridiculous but in so many different ways. One – it’s way prettier than FB. Two – seasonally healthy and delicious – take that Twitter. And three – soups. Enough said! Pinning!

I need a social media detox too, lol. But, yum what a great recipe. I had this soup today at a restaurant and came home wanting to find a recipe and came across your site. Bingo!

I sadly haven’t been on Ello since you sent me an invite. Whoops.

I can say I think I’m happy to no longer be working in social media. It feels weird that I’m no longer an expert (I guess) but it also feels nice not feeling forced to jump into every single platform always.

Ahh, this recipe def just caught my eye in my blogroll. Even though it’s spring here in Oz (i.e.: hotter than Canadian summer), I still need some soup in my life. I’ll let you know how it goes! 🙂

For the record, I’m the worst social media person ever with anything blogging related. THE worst. I’d just rather do so many other things and cannot keep up.

I feel like I need a social media detox, but then I’d miss this beautiful soup. It looks way better than the Panera version. In fact, there was something about the Panera version that was slightly off to me so I’d definitely be willing to go with yours.

neverrrrrr! Kidding! Not a lame comment at all. Just seeing M@CEFF in my inbox makes my day 🙂 Also Panera sucks in Canada (as do most American companies up here) so thank goodness my version was deemed better lol

I’ve never heard of Ello. I’m proud that I’m not that addicted to social media before. I’m not active on Facebook anymore (just now posting my vacation adventures in pictures – not sure though if anyone cares at all :-D). I post on instagram regularly but don’t scroll my whole overloaded news feed every day anymore. That’s just so time consuming. Maybe it’s because I don’t have so many close friends who use social media neither. I like it this way!
The recipe sounds very good btw!

I can’t handle anymore social media channels! Twitter, Instagram, and Pinterest are enough for me.

    This soup looks fab girl!
