Green Silver Dollar Banana Pancakes

Ingredients

  • 2 cups gluten-free oat flour (2 cups of gluten-free rolled oats ground into a flour)
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp sea salt
  • 3/4 cup plain nonfat Greek yogurt (I used PC brand)
  • 1 ripe banana, mashed
  • 1 cup spinach
  • 3/4 cup unsweetened almond milk (any milk will work)
  • 1 large egg
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Combine oat flour, baking powder, baking soda and salt.
  2. In a blender add spinach and unsweetened almond milk. Blend until all spinach has been combined.
  3. In a separate bowl combine mashed banana, greek yogurt, spinach-almond milk mixture, egg, maple syrup and vanilla.
  4. Add wet mixture to dry and stir to combine.
  5. Spray or melt coconut oil in a large pan over medium heat.
  6. Add a tablespoon of batter to make silver-dollar pancakes (or 1/3 cup for regular pancakes).
  7. Cook until all bubbles have popped (about 2 mins) and then flip over for 1 min.
  8. Serve warm with maple syrup, nut butter or preserves.

  1. In my world I would ACTUALLY have time to read blogs and still tuned to your daily eats because you never fail to put a smile on my face. Loved this post, you’d make those leprechauns proud with your recipe, humour and creativity. I was thinking you were pretty ambitious sprinkling icing sugar throughout the shoot. I can only imagine how frustrated I would get and envision myself wiping pancakes clean if the first “shower” didn’t go as planned! That’s talent which makes me find it hard to believe you can’t flip a normal sized pancake!

  4. Hi Davida! Hmmmm, I have not tried spinach in pancakes though I do like it my smoothies. I’m grain free for the time being but I do make coconut flour pancakes. I think I’d be more inclined to make a savory spinach pancake.

    In my world you must wear pants or prepare to be slobbered on by the dog! He likes to paw at you too, and those claws hurt! And he likes to nudge you with his toys, he wants treats for bringing them to you and he wants you to pick up the slobbery things and throw them for him, yuck! Most of the time I just toss him a treat and then he goes and plays with his toy 🙂
